Why You’ll Love This Green Masala Pork Curry

  • Quick & Easy: Using a pressure cooker significantly cuts cooking time, making it a great option for weeknight dinners or lazy weekend lunches.
  • No Added Oil: By using the pork’s natural fats, this curry stays incredibly flavorful without feeling overly heavy.
  • One-Pot Wonder: Less mess and fewer dishes to wash!

Ingredients You Will Need

  • Pork: 650g, washed and cut into bite-sized pieces.
  • Green Masala Paste: The star of the show! (Note: Check out my previous post/video for the exact recipe for this vibrant green paste).
  • Salt: 3/4 tbsp (or adjust to your taste, as the masala paste does not contain salt).
  • Onions: 2 medium-sized onions, thinly sliced.
  • Water: 1 cup (200 ml).
  • Garam Masala Powder: 1/2 tsp to finish the dish with a warm, aromatic kick.

How To Cook Green Masala Pork Curry in a Pressure Cooker

  1. Mix the Base: Into a pressure cooker, add salt, the entire quantity of your prepared green masala paste, and the sliced onions. Use a spatula to give everything a really good mix, ensuring the pork is beautifully coated in the green masala.
  2. Add Water: Pour in 1 cup (200 ml) of water. Remember that we aren’t adding any oil to this curry.
  3. Pressure Cook: Close the lid and pressure cook on a high flame for 2 to 3 whistles until the pork is tender.
  4. Add the Finishing Touches: Once the pressure has released naturally, open the lid. The gravy should look rich and green. Sprinkle in 1/2 tsp of my homemade garam masala powder.
  5. Simmer: Turn the flame back on and let the curry simmer uncovered for about 2 minutes to let the garam masala infuse into the gravy.
