Dudhi Halwa or Lauki ka Halwa is one of the most popular Indian Sweets Recipe, just like Gajar ka Halwa. You’ll first have to start by reducing the milk if you are not using mawa or milk solids.

Ingredients for Dudhi Halwa Recipe Without Mawa
To make the Dudhi Halwa Recipe without Mawa you will need Milk, Sugar, Cardamom Powder, Ghee, Raisins, and nuts.
• 1 Whole Pumpkin/Dudhi
We like to use the round variety of pumpkins to make Dudhi Halwa. It tastes delicious and has a nice texture. The pumpkin was approx 750 grams when grated.
• 1 Liter Milk (full-fat)
Start by boiling the milk. Allow the milk to reduce to half by continuously boiling it on low to medium heat.
• 3/4th Cup of Sugar
Use granulated sugar for this Dudhi Halwa recipe. Adjust sugar to suit your taste.
• 1 tsp Cardamom Powder
Cardamom has a nice aroma and flavour and compliments all Indian desserts.
• 4 tbsp Ghee
Pure ghee to fry the grated pumpkin and also to finish off the dish. Gives an authentic taste and flavour to the dudhi halwa, so don’t skip ghee.
• 1/2 cup Dry Fruits
You can use any dry fruits of your choice. Roast them in a little ghee before adding them to the halwa. This gives a nice crunch to the sweet dish. I like to add cashew nuts, almonds, raisins, pistachios, etc.
How to Make Dudhi Halwa Without Mawa
To make Dudhi Halwa without Mawa, we start by reducing one liter of milk to half by heating it on high to medium heat. You’ll also have the peel and grate the dudhi or pumpkin.
Then you’ll fry some dry fruits in ghee and next you’ll fry the grated dudhi for a few minutes. After that, you’ll add sugar and the reduced milk and allow the milk to completely evaporate.
Finally, you’ll add some more ghee and the fried dried fruits and continue frying the dudhi halwa till all the moisture has evaporated and you see ghee at the edges of the halwa.
You can’t go wrong if you follow these step-by-step instructions:
STEP I.
Start by boiling 1 liter of full-fat milk on medium to low heat until it reduces to half. Also, peel and grate the dudhi/pumpkin.
STEP II.
Into a large pan heat, 2 tsp of pure ghee and add half a cup of slivered nuts, and roast them for a minute. Then add the grated dudhi or pumpkin. Squeeze out the water from the dudhi for quick cooking. Fry the grated dudhi for 5 to 6 minutes on medium heat. Add a pinch of salt too.
STEP III.
Add 3/4th cup of granulated sugar and mix well. Dry up the liquids from the melted sugar and then add the reduced milk. Allow the milk to evaporate completely. Next, add a few drops of green food colour. This is optional but gives a nice rich hue to the dudhi halwa which impresses.
STEP IV.
Once the moisture from the dudhi halwa has dried out, add a tablespoon of ghee. Fry the halwa for a few minutes or until you find ghee oozing out. This is when you know that the Dudhi Halwa is ready. Now, add in the fried nuts, mix them up and then switch off the heat.

Tips to Make the Perfect Dudhi Halwa or Lauki ka Halwa
If you’re looking for more ways to make sure your Dudhi Halwa or Lauki ka Halwa tastes amazing, here’s what I recommend:
- Make sure you squeeze the water from the grated pumpkin or dudhi before adding it to the pan. This will reduce the cooking time and retain the freshness of the pumpkin.
- Use full-fat milk for a creamier and more delicious halwa. This is because we are not using any mawa/khoya in this halwa recipe.
- Fry the grated pumpkin in a little ghee for at least 5 minutes. This will contribute to the texture and taste of the halwa.
- Reduce the milk by boiling it separately. The halwa will take less time to cook and retain its grated structure. You could use condensed milk and save time. In that case, reduce the quantity of sugar in this recipe.

- Adding colour is optional, you can skip this.
