- 1 medium Dudhi (approx 750 grams), grated
- 1 litre Milk, full fat
- 4 tbsp Ghee/Clarified butter
- ¾ cup Granulated Sugar
- 1 tsp Green Cardamom, crushed
- ½ cup Dry fruits, slivered
- ¼ tsp Salt
How to Make Dudhi Halwa Without Mawa
Boil 1 liter of full-fat milk on medium to low heat until it reduces to half. Also, peel and grate the dudhi/pumpkin.
Into a large pan heat, 2 tsp of pure ghee and add half a cup of slivered nuts, and roast them for a minute. Then add the grated dudhi or pumpkin. Squeeze out the water for quick cooking. Fry the grated dudhi for 5 to 6 minutes on medium heat. Add a pinch of salt at this stage.
Add 3/4th cup of granulated sugar and mix well. Dry up the liquids from the melted sugar and then add the reduced milk. Allow the milk to evaporate completely. Next, add a few drops of green food colour.
Once the moisture from the dudhi halwa has dried out, add a tablespoon of ghee. Fry the halwa for a few minutes or until you find ghee oozing
Now add the fried dry fruits, mix well and then switch off the heat.
- Adding colour is optional, you can skip this.
- Use condensed milk instead of reduced milk. Reduce the quantity of sugar.
- Adjust the sugar in the recipe to suit your taste.
- Add ghee as needed.
