  • 1 teaspoon of olive oil

Prepare Your Soup.
Begin by heating a pan to medium-high heat and adding 1 teaspoon of olive oil. Then add the sliced onion and chopped garlic, to the pan and stir until the onion turns soft and slightly caramelizes.

Add in the pumpkin cubes and roast for 5 minutes. Then pour in the vegetable broth/water, salt and bring to a boil. Reduce the heat and let the pumpkin cook for 10 to 15 minutes. Once done, allow to cool slightly and then transfer the mixture into a blender jar.

Blend into a smooth puree taking care to hold the blender cover with a kitchen towel to avoid the hot puree spilling over. Then add oregano and pepper powder into the blender jar and stir until everything is combined. Serve hot with optional toppings. Enjoy!

How to make Pumpkin Soup at Home

  • Peel and cut the pumpkin into cubes
  • Heat 1 teaspoon of olive oil into a pan and add the sliced onion and then the chopped garlic. Allow the onions to soften.
  • Now add the pumpkin cubes, salt and vegetable broth or water. Cover and cook for 8 to 10 minutes until the pumpkin softens.
  • Then transfer the warm mixture into a blender jar and blend into a smooth puree. Add oregano and pepper powder and mix well.
  • Serve into soup bowls and top with herbs like rosemary or thyme, chilli flakes or mint leaves. Add a dash of cream to give richness to the soup.

Notes

  1.  To make 4 servings use 500 grams of pumpkin and adjust the other ingredients accordingly.
  2. Optional toppings include a teaspoon of fresh cream, cheese, chilli flakes and fresh mint for an extra hearty soup.
