Ingredients
  

  • 250 grams Red pumpkin cut into cubes
  • 1 teaspoon Olive oil
  • 1 medium Onion sliced
  • 2 cloves Garlic chopped
  • 300 ml Vegetable broth or warm water
  • ½ teaspoon Oregano salt and pepper to taste.

Optional toppings

  • 1 tsp Fresh cream
  • ½ tsp Chilli flakes
  • 1 tbsp Grated cheese
  • Fresh mint, rosemary or thyme

How to make Pumpkin Soup at Home

  • Peel and cut the pumpkin into cubes
  • Heat 1 teaspoon of olive oil into a pan and add the sliced onion and then the chopped garlic. Allow the onions to soften.
  • Now add the pumpkin cubes, salt and vegetable broth or water. Cover and cook for 8 to 10 minutes until the pumpkin softens.
  • Then transfer the warm mixture into a blender jar and blend into a smooth puree. Add oregano and pepper powder and mix well.
  • Serve into soup bowls and top with herbs like rosemary or thyme, chilli flakes or mint leaves. Add a dash of cream to give richness to the soup.

Notes

  1.  To make 4 servings use 500 grams of pumpkin and adjust the other ingredients accordingly.
  2. Optional toppings include a teaspoon of fresh cream, cheese, chilli flakes and fresh mint for an extra hearty soup.
