How to make Meatballs for Chicken Meatball Stew
We air fry the chicken meatballs at home before adding them to the stew gravy. You could even pan-fry them, it’s even better and quick. We then simmer the meatballs in a broth with vegetables. Finally, we add lemon juice and a dash of pepper to give it a lovely tangy flavour.
- MINCE: I used Chicken mince for the meatballs. You could also substitute with mutton, beef, or pork mince. Alternatively, use boneless chicken and coarsely mince it in your food processor.
- ONION, GINGER & GREEN CHILLES: The quantities of these are mentioned in the recipe card below. Combine onion, ginger, green chillies along with the mince, and then blend them in a processor or with your hands.
- EGG & BREADCRUMBS: Add an egg to this mince mixture. But once you add the egg the mince mixture will soften making it difficult to form the meatballs. So to counter this you must add fresh bread crumbs.
- CORIANDER & MINT LEAVES: Coriander and Mint leaves help to keep the meatballs soft apart from adding flavour. Also, add salt and pepper as per your taste.
Now form small balls of this chicken mixture and set them in the refrigerator for at least 20 – 30 minutes. Then brush them with oil and air fry for approximately 10 minutes.
Alternatively, pan-fry the meatballs and this will take you just 15 to 20 minutes on low to medium heat. Fry them in batches to avoid overcrowding. You can also add meatballs directly into the brewing stew without frying them. This will save you time and will not compromise the taste and flavour of the stew.

Chicken Meatball Stew Recipe – Chicken Meatball Stew with Vegetables
Cook Time: 20 minutes
Prep Time: 10 minutes
Serves: 4 persons
- Step I. Heat oil in a pan and add one medium chopped onion and saute till the onion is translucent. Then add the ginger-garlic paste and fry for a few minutes till the raw smell vanishes. Now add the tomatoes and fry them till it softens. Use two medium tomatoes for this recipe.
- Step II. Once the onions are translucent and the tomatoes are soft and mushy, add fresh vegetables, such as green peas, potatoes, carrots, etc. Stir fry the vegetables along with the onions and tomatoes for a minute or two.
- Step III. Add chicken or vegetable stock and let the veggies simmer in this broth until they are cooked. If you don’t have stock readily available, as many of us, then substitute with stock cubes dissolved in water.
- Step IV. After the vegetables are tender add the prepared chicken meatballs. Add cornflour slurry if you want to thicken the meatball stew gravy. Finally, finish off with a dash of pepper and lemon juice or vinegar.

Ingredients
For the Meatballs
- 300 grams Chicken mince
- 1 medium Onion chopped
- 1 inch ginger chopped
- 2 green chillies, chopped
- ½ cup fresh bread crumbs
- 1 whole egg
- coriander and mint leaves
- Oil for brushing the meatballs or pan-frying
- ½ tsp pepper powder
- salt to taste
For the Chicken Meatball stew
- 2 Onions, finely chopped
- 2 tomatoes, chopped
- 3 -4 green chillies, chopped
- 1 inch ginger, finely chopped
- 1 carrot cut into thick strips or cubes
- 1 medium potato cubed
- ½ cup green peas
- 2 cups Stock or 1 stock cube
- 1 tsp cornflour dissolved in ¼ cup water
- 2 -3 tbsp Oil for cooking
- Juice of half a lemon
- 1 tsp pepper powder
- Salt to taste
Instructions
For the Meatballs
- Combine chicken mince, onion, chillies and ginger and blend in a processor.
- Add bread crumbs, egg, pepper, coriander, and mint leaves and salt. Mix well.
- Make small balls and refrigerate for 20 – 30 minutes till they get firm. Pan-fry or Air-fry the meatballs and set aside.
For the Chicken Meatball Stew
- In a pan, heat 2 – 3 tbsp oil and saute the chopped onions, chillies and ginger.
- Add tomatoes and cook till it softens. Add carrots, potatoes and green peas.
- Now put in the stock or water. Add a stock cube if using water. When the vegetables are cooked add the chicken meatballs and cornflour slurry.
- Add salt and pepper powder and lemon juice.
Notes
- Use any seasonal vegetables of your choice.
- Add stock cubes instead of vegetable or chicken stock
- Adjust seasonings as per taste.
