How To Make Brinjal Bharta – Indian Eggplant Recipe.
Gather the Ingredients.
To prepare Brinjal Bharta, you will need 1 medium or large eggplant. Besides this you will also need 4 sprigs of spring onions, 8 to 10 cloves of garlic, 1-inch ginger, 4 tablespoons of vegetable oil and a pinch of garam masala powder. You may also choose to garnish with a handful of spring onion leeks and coriander for extra flavor and crunch. Once the ingredients are at hand, you’re ready to begin!
Roast and Peel the Brinjal.
Make incisions on the brinjal and then smear it with some cooking oil. Now to give a smoky effect to the bharta, roast the brinjal on an open flame. You could also roast it in an air fryer or an oven. Once the brinjal is roasted all over, peel and mash it with a fork or spoon.
Sauté Garlic, Spring Onions, Green Chillies and Ginger.
To prepare the Brinjal Bharta, firstly, heat 2 to 3 tablespoons of vegetable oil in a skillet over medium heat. Add the chopped garlic and cook until it turns fragrant. Next, add the spring onions and also the leeks, chopped ginger and green chillies. Cook until the spring onions and leeks have softened.
Add the Brinjal to the Onion Mixture & Simmer for 8 to 10 mins.
After the onions have softened add the roasted and mashed eggplant and salt to taste. Mix well and simmer on a medium-high heat for 8 to 10 minutes, or until the eggplant is cooked through and softened. Stir often so that the mixture doesn’t burn or stick to the bottom of the pan. Once done, add a dash of homemade garam masala powder for intense aroma and a tablespoon of vinegar for a slightly tangy taste.
Serving Suggestions
Garnish before Serving Hot.
Your smoky and spicy Brinjal Bharta is now ready to serve. Garnish with spring onion leeks and fresh coriander leaves. Turn off the heat and transfer the Brinjal Bharta to a serving dish. Serve warm with naan bread, rotis, chapatis or paratha and Enjoy!
Before serving the Brinjal Bharta, sprinkle some freshly chopped onion leeks and coriander leaves. This will also give the dish an extra burst of freshness! Serve hot with a side of steamed rice or naan bread for a complete meal.

How to make Brinjal Bharta – Indian Eggplant Recipe
Ingredients
- 1 medium Brinjal/Eggplant roasted, peeled and mashed
- 4 sprigs Spring onions with leeks
- 4 Green chillies, chopped
- 8 – 10 cloves Garlic chopped
- 1 inch Ginger – chopped & juliennes
- ½ tsp Garam Masala powder
- 1 tbsp Vinegar – 1 tbsp
- Salt to taste
- 3 tbsp Oil
Instructions
- Wash the brinjal and pat dry. Make small incisions on the brinjal and smear it with oil. Roast on an open flame till done.
- When slightly warm, peel the brinjal and mash it into chunks with a fork.
- Heat oil in a vessel and add the chopped garlic. Fry for 30 secs to a minute and then add the spring onions, leeks, ginger and green chillies and sauté.
- When the onions are translucent and softened add the peeled and mashed brinjal. Mix well.
- Cover and cook for 8 to 10 minutes or until the brinjal has softened.
- Finally, add garam masala powder, vinegar and garnish with spring onion leeks and coriander leaves.
- Cook for a minute and then turn off the heat. Transfer the Brinjal Bharta into a serving dish and garnish with spring onion leeks. Serve when still warm. Enjoy!
Notes
- You can roast the brinjal in an air fryer or oven. But roasting on an open flame gives it a smoky effect.
- Adjust, salt, chillies and vinegar to suit your taste.
