  • ½ tsp Garam Masala powder
  • 1 tbsp Vinegar - 1 tbsp
  • Salt to taste

Instructions

  • Wash the brinjal and pat dry. Make small incisions on the brinjal and smear it with oil. Roast on an open flame till done.
  • When slightly warm, peel the brinjal and mash it into chunks with a fork.
  • Heat oil in a vessel and add the chopped garlic. Fry for 30 secs to a minute and then add the spring onions, leeks, ginger and green chillies and sauté.
  • When the onions are translucent and softened add the peeled and mashed brinjal. Mix well.
  • Cover and cook for 8 to 10 minutes or until the brinjal has softened.
  • Finally, add garam masala powder, vinegar and garnish with spring onion leeks and coriander leaves.
  • Cook for a minute and then turn off the heat. Transfer the Brinjal Bharta into a serving dish and garnish with spring onion leeks. Serve when still warm. Enjoy!

Notes

  1.  You can roast the brinjal in an air fryer or oven. But roasting on an open flame gives it a smoky effect.
  2. Adjust, salt, chillies and vinegar to suit your taste.
