My Mum would bake this Banana Loaf Cake quite often for us when we were kids. I tried many Banana Loaf Cake recipes but couldn’t find any recipe to match the taste and flavour of my Mum’s Banana Cake. The only change that I made to my Mum’s recipe is to add walnuts to give the cake some crunch
Mum always used butter in her cakes, unlike the recent recipes that use oil. Butter gives the cake a rich flavour and taste.

Ingredients for Banana Cake
- Bananas – I used 3 ripe bananas for this cake recipe. You need not wait for the bananas to ripen, just pop them into your oven for a few minutes and you will have sweet ripe bananas ready for your cake.
- All-Purpose Flour– I prefer using all-purpose flour/maida for this cake. You can swap maida with whole wheat flour or use a 1:1 ratio of whole wheat and all-purpose flour.
- Sugar – We love the caramelized flavour of demerara or brown sugar in this Banana Cake. Granulated sugar or caster sugar works fine too, I use it quite often.
- Butter & Eggs – I used salted butter and 03 whole eggs for this recipe. Add a pinch of salt to your cake batter if you are using unsalted butter.
- Baking Powder & Baking Soda – Use baking powder and a little bit of baking soda for this cake. Baking soda gives the cake a wonderful texture.
- Vanilla Essence & Cinnamon Powder– Vanillla essence and Cinnamon powder enhances the flavour of the cake. The flavours of Banana, Vanilla and Cinnamon in this cake is just heavenly.
- Nuts – You could use any nuts to give the cake a little crunch. A handful of walnuts is just what you need to take this Banana Cake to another level. Chocolate chips also go well in this Banana Cake.

How to make Banana Walnut Loaf Cake
- First measure all your ingredients, flour, butter, sugar, eggs and let them rest at room temperature.
- Add baking powder and baking soda to the flour and sift a couple of times, at least 3 times. Also add cinnamon powder while sifting the flour. Sifting the flour helps in a light and fluffy cake and you need to strictly follow this step for all your cake recipes.
- Line a 7″ or 8″ loaf tin with parchment paper and set it aside. Alternately you could butter the loaf tin and sprinkle all-purpose flour to give it a non-stick effect.
- Peel the 3 bananas and mash them with a fork. You don’t need to mash them completely, a few chunks leftover is fine. If the bananas are not ripe enough you could place them on a baking tray and bake them in a moderately hot oven for 5 to 8 minutes. Alternately, you can also soften them in your airfryer. You’ll have perfect ripe bananas ready for your cake.
- Now cream the butter and sugar with an electric beater till light and fluffy. You could also use a hand whisk for this.
- Drop in the eggs, which are at room temperature, one by one and continue to beat until all the three eggs are used up.
- Add the 3 ripe mashed bananas and mix well either with the beater on a low speed or with a spatula. Add the vanilla essence.
- Then add the sifted flour mixture that has baking powder and baking soda and give it a mix. Don’t be harsh on the batter at this stage or you’ll end up with a flat cake. Add the chopped walnuts and mix gently.
- Now when you have mixed all the ingredients, then pour the batter into the lined loaf tin. Gently tap the tin to release the air bubbles, if any.
- Bake the Banana Loaf Cake in a pre-heated oven at 180°C for 40 to 45 minutes or until a skewer inserted comes out clean. Unmould the cake after 10 minutes.
Serving Suggestion
Slice the Banana Loaf Cake when it is completely cool and serve with your favourite cup of tea or coffee. A healthy cake for your kid’s school recess time.

- Then add the sifted flour mixture that has baking powder and baking soda and give it a mix.
- Add the chopped walnuts and mix gently.
- Pour the batter into a lined loaf tin and bake at 180°C for 40 to 45 minutes.
- Allow the Banana Walnut Loaf Cake to cool and then slice it.
Notes
- Use ripe bananas for this cake recipe.
- Add a few raisins for added sweetness.
