What dal should I use for Cauliflower Dal Recipe?

We make this Cauliflower Dal Recipe with Toor dal, but you could even use moong dal. Since this is a coconut-based recipe with masala and tamarind, Toor dal blends well with this recipe. Moong dal is meant for the lighter version of dal recipes, this is what I presume. So I highly recommend Toor dal for Cauliflower Dal Recipe.

How to make the Cauliflower Dal Recipe?

This is a straightforward recipe and moreover it gets done in minutes. Once you prep up your ingredients, this recipe will be ready in just 10 – 15 minutes. Cauliflower cooks very quickly, and you don’t even have to use a pressure cooker for cooking the cauliflower. But you must pressure cook the toor dal but do not let it overcook; one whistle will work just fine.

PREP YOUR INGREDIENTS

  • Soak 1 cup toor dal for at least half an hour and pressure cook with salt and turmeric. Do not overcook.
  • Cut the cauliflower florets into medium pieces and soak them in lukewarm salt water for 10 – 15 minutes. Soaking cauliflower in saltwater will remove insects, if any, from the florets. Generally, cauliflower tends to harbour tiny insects, and hence it is essential to soak the florets in saltwater.
  • Grind 3 tbsp of grated coconut with 1 cup water and set aside. We will use coconut to form the base of our recipe. You may also choose to use coconut milk or coconut milk powder. If using coconut milk powder follow the instructions on the pack to make 1 cup thick coconut milk.
  • Finally, we will need tamarind pulp or tamarind juice to give a little zing to the recipe. You may also use lemon juice instead of tamarind. Use 1 tbsp tamarind pulp or else soak a lime size ball of tamarind in 1/4 cup water and squeeze the pulp.
  • You will also need 1 sliced onion and 1 tbsp bottle masala powder or any curry masala for this recipe. I always use the East Indian Bottle Masala to make the Cauliflower Dal Recipe because my family loves it.

MAKING THE CAULIFLOWER DAL RECIPE

  • Saute one sliced onion in oil and then add the bottle masala and the cauliflower florets. Add 1 cup water, cover and cook till the cauliflower is tender.
  • Now add the cooked dal, coconut paste or coconut milk and tamarind pulp. Cook for another 2 – 3 minutes and then garnish with coriander leaves.
  • Serve Cauliflower Dal with steamed rice or rotis.
