Easy Rice Flour Laddu Recipe: A Traditional Treat You Can't Resist

Traditional rice flour laddus with jaggery, coconut and flavoured with cardamom. A delightful treat for all sweet lovers.

Ingredients
  

  • 500 grams Pathni or red rice
  • 2 cups freshly grated coconut
  • 250 grams jaggery
  • 2 tbsp ghee clarified butter
  • ¼ cup chopped nuts cashews, almonds, or pistachios - optional
  • 1 tsp cardamom powder
  • pinch of salt

Instructions
 

  • Wash the red Pathni rice a couple of times, drain, and allow it to air dry, under the fan.
  • In a large pan, add the rice and roast it on medium to high heat until the rice turns light golden brown and begins to splutter.
  • Once the rice is roasted, remove it from the heat and let it cool for a few minutes. Once cool grind it into a fine powder in your mixie jar and pour it into a flat plate or thala.
  • In a mixer jar grind the coconut and jaggery once or twice until they come together.
  • Add this coconut and jaggery mixture to the roasted rice flour. Also add chopped nuts, cardamom powder, and a pinch of salt to the roasted rice flour. Mix well to combine all the ingredients evenly.
  • Add 2 tablespoons of melted ghee and mix well.
  • Now, take a small portion of the mixture and shape it into a round ball using your hands. Repeat this process with the remaining mixture.
  • Garnish the laddus with a few chopped nuts on top, if desired.
  • Store them in an airtight container and enjoy them with a cup of tea or coffee.

Notes

  1.  Use red Pathni rice or any red unpolished rice
  2. Wash, drain, and air dry the rice completely before roasting.
  3. Roast the rice till it turns crisp and pops up.
  4. Add a pinch of salt to the rice mixture.
  5. Adjust jaggery and coconut, as per your taste.
  6. Add cardamom powder for enhanced flavour.
