China Grass Milk Pudding (Agar Agar Pudding)

A delicious pudding recipe that is popular in all Indian home. Quick and easy to make with few ingredients.

Ingredients
  

  • 1 litre Milk (full fat milk)
  • ¾ cup Sugar (150 grams)
  • China grass or Agar Agar Powder 8 to 10 grams or agar-agar powder - 2 to 3 tsp
  • ¼ cup Water or Milk (for agar agar)
  • ½ tsp Vanilla essence
  • 2 to 3 tbsp Nuts or as desired

Instructions
 

  • Start by soaking the China grass in water for a few minutes and then melt it on low to medium flame. Keep stirring occasionally until the strips melt and you get a thick gelatin-like liquid.
  • Next, pour in the room temperature milk and mix well by stirring on a low flame. Add sugar and vanilla essence and then switch off the heat.
  • If using agar agar, dissolve in 1/4 cup warm milk and add to boiling milk
  • Pour the China grass pudding or agar agar pudding into a flat dish and top it with nuts. of your choice. Add a few strands of saffron (optional)
  • Place the pudding in the refrigerator for 2 to 3 hours before serving.

Notes

  1. Use 2 to 3 tsp agar-agar powder instead of agar-agar strips.
  2. Do not over-boil the milk after adding the agar-agar or the milk will curdle.
  3. Preferably discard the water in which you soaked your china grass strips and add fresh water to avoid curdling.
  4. Adjust sugar as per taste or use condensed milk.
