Soy Garlic Chicken Recipe | How to make Garlic Soy Chicken

Soy Garlic Chicken Recipe is so easy that you can make it in just under 30 minutes. This is a basic stir fry recipe with simple sauces such as Soy and Oyster along with few other ingredients.

A few years ago when Chilli Chicken had made its appearance on all restaurant menu, this humble Soy Garlic Chicken made its way into my home. This is my alternative to the regular chilli chicken recipe with a taste that is similar to it.

For this recipe, I use chicken on the bone and skip the deep frying with batter. You could use boneless chicken as well for this recipe. This recipe is also a healthier option since no frying of chicken is involved.

When you make this Soy Garlic Chicken with bones, the juices from the bones mix with the sauces making it more flavourful. The bones also absorb the sauces making them flavourful and juicy. I prefer it this way but feel free to use boneless chicken.

A dash of freshly grated black pepper is just what it needs.

Soy Garlic Chicken Marinade

  • Soy Sauce. Like all stir fry recipes, I like to add soy sauce to this Soy Garlic Chicken Recipe too. I like to use it for marination as well as in the stir fry. I prefer to use dark Soy Sauce for my stir-fries but you may like to use whatever sauce you have.
  • Oyster Sauce. I like Oyster Sauce in my stir fry recipes, as well. This gives a distinct flavour and texture to the stir fry recipe.
  • Chilli Paste. To make chilli paste at home, boil a few Kashmiri red chillies. Discard the seeds and make a paste with a few cloves of garlic and a little water. Use this chilli paste into your marinade for some spice. Store-bought Red Chilli paste or chilli sauce works just as fine.

How to make Garlic Soy Chicken

Other Ingredients for the Garlic Soy Chicken Recipe –

  • Chicken. Use 500 grams chicken on the bone or boneless chicken, as you prefer. Wash and cut the chicken to the desired pieces. Drain the chicken well or pat dry with a kitchen towel.
  • Garlic & Green Chillies. Here you are free to use garlic as per your taste. I like to add 18 to 20 flakes for this recipe. A little finely chopped garlic adds more flavours to the recipe.
  • Capsicum. Use one or two capsicums and cut them as desired. Lightly fry them and add in the final step of cooking to retain the crunch.
  • Sauce Mix. Keep the sauce mix ready before you could start the stir-frying. The sauce mix that I use for this recipe can be adjusted to suit your taste.
    • Soy Sauce – 1 tbsp
    • Oyster Sauce – 1 tbsp (optional)
    • Red Chilli Sauce – 1 tbsp
    • Tomato Ketchup – 1 tbsp
    • Vinegar – 1 tbsp

Method

  • Marinate Chicken pieces with Soy Sauce, Oyster Sauce, and also some Red Chilli paste. Add salt to taste and allow the chicken to marinate for at least 30 minutes for it to absorb the flavours of the sauces.
  • Heat a Wok, fit enough to hold 1/2 kg of chicken pieces. Then add a little vegetable oil and lightly fry the cut capsicum and slit green chillies for a minute and remove.
  • Next, in the same wok, heat 2 tbsp oil and add the chopped garlic. Saute until the garlic is light brown in colour. Now add in the marinated chicken and then stir fry for 2 minutes. Then cover and cook on a low flame for 8 to 10 minutes or till the chicken is tender.
  • After 10 minutes, add in the sauce mix and also a teaspoon of pepper powder. Continue to stir fry on the high flam till the liquids dry up.
  • Now sprinkle 1 tsp cornflour over the cooked chicken and mix continuously to avoid forming lumps. The liquids will now begin to thicken.
  • Finally, add the fried capsicum and slit green chillies along with the spring onion green. You may still find a little liquid and this will dry up completely once the Soy Garlic Chicken cools down.

Serving Suggestions

Serve Soy Garlic Chicken with fried rice, stir fry noodles. You may also like to just enjoy it as an appetizer.

If using boneless chicken for this recipe, you can roll it into paratha or chapati and pack it for lunch.

  • 1 Capsicum – sliced
  • 3 – 4 Green chillies – slit
  • 18 – 20 flakes Garlic or 2 tbsp chopped
  • 1 tsp Cornflour to sprinkle
  • 1 tsp Pepper powder
  • 3 tbsp Vegetable Oil

Soy Garlic Chicken Marinade

  • 1 tbsp Soy Sauce – 1 tbsp
  • 1 tbsp Oyster Sauce – 1 tbsp or use red chilli sauce
  • 1 tbsp Chilli paste – 1 tbsp
  • Salt to taste

Stir Fry Sauce Mix

  • 1 tbsp Soy Sauce
  • 1 tbsp Red Chilli sauce
  • 1 tbsp Tomato Ketchup or use hot-sweet sauce
  • 1 tbsp Vinegar

Instructions
 

  • Marinate Chicken pieces with Soy Sauce, Oyster Sauce, and Red Chilli paste. Add salt to taste and allow the chicken to marinate for at least 30 minutes.
  • Heat a Wok and add a little vegetable oil and lightly fry the cut capsicum and slit green chillies for a minute and remove.
  • In the same wok, heat 2 tbsp oil and add the chopped garlic. Saute until the garlic is light brown in colour. Now add in the marinated chicken and stir fry for 2 minutes. Then cover and cook on a low flame for 8 to 10 minutes or till the chicken is tender.
  • After 10 minutes, add in the sauce mix and pepper powder. Continue to stir fry on the high flam till the liquids dry up.
  • Now sprinkle 1 tsp cornflour and mix continuously to avoid forming lumps. The liquids will now begin to thicken.
  • Finally, add the fried capsicum and slit green chillies along with the spring onion green.

Notes

  1.  Do not add cornflour slurry instead sprinkle a tsp of cornflour when the chicken is almost ready.
  2. Do not worry if a little liquid remains at the end of cooking time, this will quickly dry up.
  3. Adjust sauces and chillies to suit your taste.
  4. Serve hot with fried rice or noodles.
