Quick and simple stir fry recipe with Soy and Garlic. Chicken pieces are marinated in sauces and then cooked to make this delicious Soy Garlic Chicken recipe.

- 500 grams Chicken curry cut pieces
- 1 Capsicum - sliced
- 3 - 4 Green chillies - slit
- 18 - 20 flakes Garlic or 2 tbsp chopped
- 1 tsp Cornflour to sprinkle
- 1 tsp Pepper powder
- 3 tbsp Vegetable Oil
Soy Garlic Chicken Marinade
- 1 tbsp Soy Sauce - 1 tbsp
- 1 tbsp Oyster Sauce - 1 tbsp or use red chilli sauce
- 1 tbsp Chilli paste - 1 tbsp
- Salt to taste
Stir Fry Sauce Mix
- 1 tbsp Soy Sauce
- 1 tbsp Red Chilli sauce
- 1 tbsp Tomato Ketchup or use hot-sweet sauce
- 1 tbsp Vinegar
Marinate Chicken pieces with Soy Sauce, Oyster Sauce, and Red Chilli paste. Add salt to taste and allow the chicken to marinate for at least 30 minutes.
Heat a Wok and add a little vegetable oil and lightly fry the cut capsicum and slit green chillies for a minute and remove.
In the same wok, heat 2 tbsp oil and add the chopped garlic. Saute until the garlic is light brown in colour. Now add in the marinated chicken and stir fry for 2 minutes. Then cover and cook on a low flame for 8 to 10 minutes or till the chicken is tender.
After 10 minutes, add in the sauce mix and pepper powder. Continue to stir fry on the high flam till the liquids dry up.
Now sprinkle 1 tsp cornflour and mix continuously to avoid forming lumps. The liquids will now begin to thicken.
Finally, add the fried capsicum and slit green chillies along with the spring onion green.
- Do not add cornflour slurry instead sprinkle a tsp of cornflour when the chicken is almost ready.
- Do not worry if a little liquid remains at the end of cooking time, this will quickly dry up.
- Adjust sauces and chillies to suit your taste.
- Serve hot with fried rice or noodles.
