Saffron Rice Recipe | How To Prepare Saffron Rice

Ingredients
  

  • 2 cups Basmati Rice soaked for 30 min
  • 2 pinches saffron strands soaked in 2 – 3 tbsp hot milk
  • 2 – 3 tbps Ghee
  • Cashewnuts & raisins as needed
  • Whole spices : bay leaf, cardamom – 3, cloves -4, cinnamon stick -1″, peppercorns – 1/4 tsp
  • 1 medium Onion
  • 2 tbsp Sugar – 2 tbsp
  • 1 tsp Salt or use as per taste
  • 3 cups Hot water

Instructions
 

  • Wash and soak Basmati Rice for at least 30 minutes.
  • Heat 2 to 3 tbsp of ghee in a cooking pot, add the whole spices and saute for a minute.
  • Now add the sliced onions and fry on medium to high heat until they turn brown and then remove.
  • Next, add the cashew nuts and raisins, fry for a few seconds and add the soaked and drained basmati rice. Fry the rice until the ladle feels hard to stir.
  • Then add 2 tbsp sugar and salt to taste. Give the rice a gentle stir and add 3 cups of hot water.
  • Cook the rice on a high heat until the water begins to dry. Now cover the pot and reduce the heat to low. Cook the rice on low heat for 5 to 6 minutes and then turn off the heat. Keep covered for 15 minutes.
  • After 15 minutes, open the lid and fluff the rice gently with a fork. Pour in the saffron-infused milk. Also, sprinkle the fried onions all over the rice. Cover and let the rice rest for another 2 minutes and serve.

Notes

  1.  Add double the quantity of water to rice, if rice is not soaked.
  2. Adjust sugar and salt to taste.
  3.  Use good quality saffron for colour and fragrance.
