Pork Chilli Stir Fry. This is an easy-to-cook pork recipe with soy sauce. We just love stir fry recipes as they are quick, simple, and easy to prepare.

The recipe in this post is a Pork Chilli dry recipe with juicy pork pieces coated in soy sauce, chilli sauce, and pepper. This dish can also double up as a dry recipe or as a starter.
Pork Chilli Stir Fry is different from the Pork Chilli Fry Goan or the East Indian style. You could also refer to this as an Indo-Chinese Recipe for Pork Chilli.
For a Good Stir Fry Recipe:
- The stir-fried meat must be firm yet juicy.
- The vegetables must have a slight crunch but should not be raw.
- The recipe must be cooked on high heat in a wok or a broad pan to keep the moisture intact.
- Ensure that all your ingredients are ready on your cooking counter before you start stir-frying.
- Most Indian Stir fry recipes use store-bought sauces that not only taste awesome but also have a good shelf life.
- A good stir fry recipe should get done within 5 to 7 minutes.
Pork Chilli Dry Recipe Ingredients
- PORK – Preferably use pork belly as it has more fat than the other parts. I am using 650 grams of pork belly for this Pork Chili Dry recipe. The juicy pork pieces are the result of using pork belly for the recipe because of their fat content. Moreover, cooking the pork in a pressure cooker will also yield softer meat.
- CAPSICUM – Capsicums give a wonderful taste to any stir fry recipe and Pork Chilli Stir fry is no exception. Use one or two capsicums, and cut them into wedges or cubes for this recipe. You could use the red and yellow bell peppers too for a colourful presentation
- GINGER & GARLIC – A stir fry recipe without garlic has no punch. Chop garlic finely and use it generously. Ginger can be optional but I suggest you use it because it aids in digestion.
- GREEN CHILLIES – Green chillies juliennes add a touch of spice to the stir fry. Use 3 to 4 green chillies or add as per your taste or spice tolerance.
- SPRING ONIONS – I like to use both the head as well as the leeks of the spring onions in my stir-fry recipes. Cut the spring onions and separate the head and the leeks and set them aside.
- CORNFLOUR – You will not need any cornstarch for this pork chilli stir fry as the fat thickens up the sauces. Sprinkle a little dry cornflour, if you must.
- SESAME OIL – I prefer to add sesame oil to give a final touch to my stir-fry recipes. It also renders a nice nutty flavour to the stir-fry. But in this recipe, the Pork Chilli already releases much fat hence I give it a skip.

How to make a good Soy Sauce Pork Chilli Stir-Fry
Prep Time: 30 minutes
Cook Time: 40 minutes
Serves: 04 persons
- Prep the Pork – Wash and pat dry the pork and cut it into bite-size pieces.
- Marinate the Pork – Add all the marinade ingredients to the pork pieces and allow them to rest for at least 30 minutes. This will help in tenderizing the meat and also infusing the flavours.
- Cook the Pork – The pork we get in India is tough to cook in a stir-fry recipe hence we need to pre-cook it before stir-frying. After 30 minutes of marination, transfer the marinated pork into a pressure cooker with 2 – 3 tbsp of water and cook till done. This should take 5 to 6 whistles or 25 to 30 min on a low flame depending on the pork quality.
- Cut the Veggies – Cut the capsicum, bell peppers (if using), and onion into cubes, wedges, or juliennes as desired. Also, cut the spring onions and separate the onion head and the leeks. Cut about 3 to 4 green chillies, into juliennes depending on how spicy you like it to be.
- Garlic – Chop garlic cloves finely. Then heat 2 tbsp oil in a wok and add the garlic along with the onion heads and stir fry on high heat for a minute or two.
- Veggies – Add the onions, capsicums, bell peppers, and green chilli juliennes and continue to stir fry for one more minute.
- Sauces – Measure the sauces in a small bowl and add this to the wok. Stir fry the sauces too on medium heat for at least 30 seconds.
- Pork – Dry up all the liquids in the pressure cooker and then transfer the pork pieces into the wok. Now stir fry the cooked pork along with the vegetables on a medium to high flame.
- Pepper powder & Vinegar – Finally, add in a teaspoon of freshly crushed pepper powder and a tbsp of vinegar and mix well. Sprinkle a little cornflour if you like.
- Taste and check for seasoning and then finally garnish with the onion leeks.

Soy Sauce – 1 tbsp

Garlic – 7 to 8 flakes chopped
Onion – 1 medium
Capsicum – 2 medium
Green chillies – 3 to 4 juliennes
Soy Sauce – 1 tbsp
Red Chilli Sauce – 1 tbsp
Pepper powder – 1 tsp
Vinegar – 1 tbsp
Spring Onions – 3 to 4 sprigs
Directions

- Cook the Pork – After 30 minutes transfer the pork into a pressure cooker and cook till done. This should take you 5 to 6 whistles or 25 to 30 min on a low flame.
- Cut the Veggies – Cut the capsicum and onion into cubes or wedges, as desired. Also, cut the spring onions and separate the onion head and the leeks. Cut 3 to 4 green chillies into juliennes.
- Garlic – Chop the garlic finely. Heat 2 tbsp oil in a wok and add this garlic along with the onion heads and stir fry on high heat.
- Veggies – Add the onions, capsicums, and green chilli julienne and continue to stir fry for one more minute.
- Sauces – Measure the sauces for the stir fry and add this to the wok. Stir fry the sauces too on medium heat for at least 30 seconds.
- Pork – Dry up all the liquids in the pressure cooker and then transfer the pork into the wok. Stir fry this along with the vegetables and sauces on a medium to high flame.
- Pepper powder & Vinegar – Now add in a teaspoon of pepper powder and a tbsp of vinegar and mix well.
- Finally, garnish with spring onion leeks
Notes
- Do not add more salt as soy sauce already contains high sodium.
- Use any good quality store-bought sauces and vinegar.
- Do not overcook the pork in the pressure cooker. Use a vessel to cook the pork instead.
