Light Fruit Cake is one of my favourite homemade cakes to bake when I want something soft, fruity, and perfect with tea. It is easy to make and always turns out delicious.

Ingredients for Light Fruit Cake Recipe

  • 200 gms mixed fruits of your choice soaked in 2 to 3 tbsp rum or brandy
  • 200 gms all-purpose flour
  • 1 tbsp semolina
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 200 gms butter
  • 160 gms granulated sugar powdered in a mixer
  • 4 whole eggs
  • 1 tsp vanilla essence
  • 8-inch baking tin

How To Make Light Fruit Cake Recipe

1. Preheat the oven to 170°C. Grease and line an 8-inch baking tin.

2. Soak the mixed fruits in rum, brandy, or orange juice for a few hours or overnight.

3. Sift together the all-purpose flour, semolina, baking powder, and salt.

4. Beat the butter and powdered sugar until light and creamy for at least 5 minutes.

5. Add the eggs one at a time and beat well after each addition.

6. Mix in the vanilla essence.

7. Gently fold in the sifted dry ingredients. Use an electric beater on low speed or a spatula will also work fine.

8. Add the soaked fruits and mix lightly. Do not over-mix the batter.

9. Now, pour the batter into the prepared tin.

10, Bake for 45 to 55 minutes or until a skewer inserted in the centre comes out clean. Baking time will depend on your oven.

11. Cool the cake completely before slicing
