Make Marshmallows at home the easy way… it’s is so quick and so much fun. These sweet fluffy, pillow-soft vanilla-scented bites are a favourite among kids.

You will be surprised to know that you can make such soft and fluffy marshmallows at the comfort of your home with a few basic ingredients and easy steps.

We have been making marshmallows at home during Christmas every year for a long time and each time they turn out so soft and fluffy.

What are Ingredients in Marshmallow

  • Unflavoured Gelatin – is the main ingredient in marshmallows. Use the unflavoured gelatin and flavour it as per your choice.
  • Granulated sugar – Melt Sugar on a low to medium heat till you get a two-thread consistency. This is an important step or else your marshmallows will turn soggy the next day.
  • Egg white – Though adding egg white is optional it enhances the texture of the marshmallows
  • Vanilla Extract – Finally, we use vanilla extract to flavour our marshmallows.

How its made – Marshmallows

1 Cup = 250 ml

  • Add 350 grams sugar to 1/2 cup water and melt it on medium flame. Melt the sugar to form a syrup of 2 thread consistency.

To know if your sugar has reached a 2 thread consistency, simply hold a little syrup between the tips of your forefinger and thumb. Now try to pull it apart and you will notice threads like structures that determine the consistency of the syrup.

  • Add 2 tbsp gelatin into 1/2 cup water and then melt it in the microwave for a minute. You could also melt the gelatin on a double boiler.

To melt the gelatin in a double boiler, place gelatin and water in a bowl over the double boiler and keep stirring till gelatin melts.

  • Beat up one egg white into a stiff froth. Adding egg white is optional but trust me it gives a nice texture to your marshmallows.
  • To assemble the marshmallows, beat up the melted sugar with an electric beater. Add 1 to 2 tbsp of melted gelatin at the same time. Beat till all the gelatin mixture is used up.
  • Now add the beaten egg, vanilla essence, and a little food colour, if using. Continue to beat for a minute or two. Then pour this mixture into a tray greased with butter. You could also use parchment paper on your tray for easy removal.
  • Place this marshmallow mixture in the refrigerator to set till firm and then unmould. The marshmallow initially will feel sticky, unmould on to a mixture of cornflour and icing sugar, and then cut into cubes.
  • Roll the marshmallow cubes into the cornflour-icing sugar mixture and then store them in an air-tight container.

Ingredients

  • 350 grams granulated sugar
  • ½ cup water
  • food colour, preferably pink optional
  • 1 tsp vanilla essence
  • 1 Egg white optional
  • A pinch of salt
  • 2-3 tbsp Icing sugar & cornflour mixture for rolling the marshmallows

For the gelatin mixture

  • 2 tbsp gelatin
  • ½ cup water

Instructions
 

  • Grease a 9" x 9" pan with butter. Preferably line the pan with parchment paper.
  • Beat up the egg white to a stiff froth.

How to Cook Marshmallows

  • Into ½ cup water add the sugar and keep stirring on a medium flame till syrup forms into two thread consistency. Let cool.
  • Into the remaining ½ cup water add gelatin and melt on a double boiler or microwave for a minute.
  • Beat up the sugar syrup with a beater, add melted gelatin little by little and continue to beat till the entire gelatin mixture is used up.
  • Add the egg white, vanilla essence and colour and continue to beat for 2 – 3 more minutes.
  • Now pour the marshmallow mixture into the greased tray and chill in the refrigerator till firm.
  • Unmould the marshmallow on to a mixture of icing sugar and cornflour. Cut into cubes and store them in an air-tight container.
