Green Peas and Carrot | Gajar Matar Subzi

Green Peas and Carrot -Gajar Matar Subzi is a traditional Indian style vegetable preparation. This vegetable is mostly made during the winter months, especially in Northern India, when carrots and green peas are in abundance. Moreover, the sweet taste of the vegetables renders a unique flavour to the dish.

These seasonal vegetables are packed with nutrients and are very tender and juicy. Even the simplest of recipes made with these vegetables, grown in winter, enhances the taste of the dish.

What inspired me to prepare Green Peas and Carrot/Gajar Matar Subzi?

My family is generally not a fan of Subzis, so I don’t bother to try out variations. I cook only our regular traditional family vegetable dishes like Green Bean Foogath, Cluster Beans/Gavar Foogath.

The other day, I came across this divine combination of carrots and Green Peas/Gajar Matar Subzi on the internet. This dish was made by one of the most popular Chef’s in India, Chef Ranveer Brar.

His way of presenting this simple recipe, and also listing the importance of including seasonal vegetables in our diet, inspired me to try this recipe.

Being a seasonal vegetable, I had lots of carrots and green peas in my refrigerator. I made this for my son’s and my lunch box and believe me it tasted divine. Even my fussy boy devoured this vegetable with chapatis.

What I liked about this recipe is that it’s so simple to prepare with only a few ingredients that are readily available in all Indian kitchens. Any seasonal vegetable, when prepared during its peak season lends a unique taste to the dish. The vegetables have sweetness in them and are so juicy that you can even have them raw, which is even more nutritious.

How to make Gajar Matar Subzi

  • You must use pure ghee to make this awesome vegetable which adds to its nutritional value.
  • In a processor, blend tomato, ginger and 2 – 3 green chillies.
  • Heat ghee in a Kadai and add cumin seeds. When cumin seeds begin to splutter add the blended tomato paste and stir for about 3 – 4 minutes.
  • Add spices like chilli powder, coriander powder, turmeric, salt and a little pepper powder.
  • Put in the diced carrots and green peas. Add a little water and cook till done.
  • Add lemon juice, sugar and garnish with fresh coriander leaves.
  • Serve with chapatis or phulkas.

Ingredients
  

  • 3 – 4 Red Carrots, diced
  • 1 cup Green peas
  • 2 tbsp Ghee
  • ½ tsp Cumin seeds
  • 1 small Tomato
  • 1" piece Ginger
  • 2 -3 Green chillies
  • ½ tsp Coriander powder
  • ¼ tsp Turmeric powder
  • ½ tsp Red chilly powder
  • ¼ tsp Pepper powder
  • Juice of half a lemon
  • ½ tsp Sugar optional
  • Salt to taste
  • Fresh Coriander leaves for garnish

Instructions
 

  • Blend together tomato, ginger and green chillies in a processor.
  • Heat ghee in a Kadai and add cumin seeds. When cumin seed splutters, add the blended paste of tomato, ginger and green chillies. Saute for 3 – 4 minutes
  • Add chilly powder, coriander powder, turmeric, and pepper powder.
  • Put in the carrot and green peas. Add a little water and salt. Cover and cook till done.
  • When vegetables are cooked add lemon juice, sugar and garnish with fresh coriander leaves.
  • Serve with chapatis or phulkas.
