Egg Drop Curry is the most delicious Egg Curry Recipe that you can make at home. For this egg curry recipe with coconut and use raw eggs instead of boiled eggs.

Using raw eggs in the curry not only enhances the flavour of the curry but gives it a wonderful texture. You could enjoy the flavours of eggs in the gravy and you could enjoy this with rice.

In case you do not like to use raw eggs in this curry then boil the eggs separately and add them to the curry. If using boiled eggs in the curry then give them a slit or two and then drop into the curry for the flavours to seep in.

Egg curries are a great substitute for fish and meat and can make a perfect lunch or dinner recipe.

We make this egg curry way too often at home because it’s so quick and easy to make. Moreover, this curry is a family favourite and even enjoyed by fussy eaters.

Egg Curry Ingredients

  • Eggs – Use 5 or 6 whole eggs for this egg curry. We add raw eggs to the boiling curry and allow it to cook in the curry. Cooking eggs this way in an Egg Curry allows the curry to absorb the flavour of the eggs. Alternatively, you could also use boiled eggs in this curry.
  • Onion – Saute one medium onion sliced. Fry the onion till it turns translucent before you could add the other spices or masala.

Substitute Bottle masala with 1 tbsp chilly powder, 1 tsp coriander powder, 1/2 tsp cumin powder, 1/4 tsp turmeric powder, and 1/2 tsp garam masala powder

  • Coconut – At home, we use freshly grated coconut for this egg curry recipe. You could also substitute fresh coconut with coconut milk. Use one cup of thick coconut milk instead of fresh coconut.
  • Oil for cooking – use any cooking oil or ghee to make this curry.
  • Salt to taste

Masala for the Egg Curry (Blend into a fine paste)

  • Coconut – Use ½ a cup of freshly grated coconut or 1 cup of coconut milk.
  • Coriander leaves – 1/2 cup add to suit your taste
  • Garlic – 4 or 5 flakes
  • Ginger – 1 inch piece
  • Green chillies – 2 to 3 Nos.

How to make Egg Curry

  • Heat a pan, add oil and saute one medium sliced onion until it is translucent.
  • When the onion is translucent add in the blended masala paste and the powdered masalas and then stir fry for 2 to 3 minutes.
  • Add sufficient water to make the egg curry. Approx. 300 ml of water would be fine to make the curry that is not too thin or thick.
  • When the curry comes to a boil, break open the eggs and drop them into the curry one by one. Drop them in such a way that there is enough space around the eggs to cook.
  • Do not stir the gravy at this point but cover the vessel and let the eggs cook for at least 4 to 5 minutes.
  • Now switch off the flame and keep the vessel covered for 2 minutes before serving.
  • Simple Egg Curry Recipe is done and ready to be served.

Serving suggestions

You can serve this Egg curry with steamed rice or Rotis. This curry can be had for lunch or dinner and makes a complete meal when eaten with rice or chapati.

Ingredients
  

  • 5 – 6 Eggs (raw)
  • 1 medium Onion, sliced
  • 1 tbsp Bottle Masala/Curry masala Or 1 tbsp chilly powder + 1 tsp coriander powder + 1/2 tsp cumin powder + 1/4 tsp turmeric powder + 1/2 tsp garam masala powder
  • 2 tbsp Oil for cooking
  • Salt to taste

For Masala Paste

  • ½ cup Freshly grated coconut
  • ½ cup Coriander leaves
  • 4 – 5 Garlic flakes
  • 1-inch Ginger

How to make Egg Curry

  • Heat oil in a pan and saute the onion until translucent.
  • Now add the ground masala paste and salt. Also, add in the bottle masala or curry masala or chilly powder with garam masala and fry for 2 to 3 minutes.
  • Add water, approx. 300 ml to make the gravy and let it come to a boil.
  • When the gravy comes to a boil, drop in the eggs one by one. Do not stir.
  • Place the lid on the vessel and let the eggs cook for 4 to 5 minutes.
  • Now switch off the flame and keep covered for 2 minutes before you could serve the Egg Drop Curry.

Notes

  1.  As a substitute for Bottle Masala add 1 tbsp chilly powder +1 tsp coriander powder + 1/2 tsp cumin powder + 1/4 tsp turmeric powder + 1/2 tsp garam masala powder or use any curry masala.
  2. It is suggested that you break the egg into a cup before dropping it into the gravy.
  3. You could also follow the same recipe and used boiled eggs to make the curry.
  4. Use coconut milk instead of the fresh coconut but add it to the curry later.
  5. Garnish the Egg Drop Curry with coriander leaves.
