A simple yet delicious recipe for Egg Curry with raw eggs dropped in boiling curry.

Ingredients
  

  • 5 - 6 Eggs (raw)
  • 1 medium Onion, sliced
  • 1 tbsp Bottle Masala/Curry masala Or 1 tbsp chilly powder + 1 tsp coriander powder + 1/2 tsp cumin powder + 1/4 tsp turmeric powder + 1/2 tsp garam masala powder
  • 2 tbsp Oil for cooking
  • Salt to taste

For Masala Paste

  • ½ cup Freshly grated coconut
  • ½ cup Coriander leaves
  • 4 - 5 Garlic flakes
  • 1-inch Ginger

How to make Egg Curry

  • Heat oil in a pan and saute the onion until translucent.
  • Now add the ground masala paste and salt. Also, add in the bottle masala or curry masala or chilly powder with garam masala and fry for 2 to 3 minutes.
  • Add water, approx. 300 ml to make the gravy and let it come to a boil.
  • When the gravy comes to a boil, drop in the eggs one by one. Do not stir.
  • Place the lid on the vessel and let the eggs cook for 4 to 5 minutes.
  • Now switch off the flame and keep covered for 2 minutes before you could serve the Egg Drop Curry.

Notes

  1.  As a substitute for Bottle Masala add 1 tbsp chilly powder +1 tsp coriander powder + 1/2 tsp cumin powder + 1/4 tsp turmeric powder + 1/2 tsp garam masala powder or use any curry masala.
  2. It is suggested that you break the egg into a cup before dropping it into the gravy.
  3. You could also follow the same recipe and used boiled eggs to make the curry.
  4. Use coconut milk instead of the fresh coconut but add it to the curry later.
  5. Garnish the Egg Drop Curry with coriander leaves.
