With a few seasonal vegetables and basic sauces, you can churn out the most delectable stir-fried noodle recipe with prawns and eggs. Preparing a delicious Prawn Chow Mein begins with prepping the ingredients and a perfect blend of sauces.

Choose medium juicy prawns and fresh crunchy vegetables such as cabbage, beans, spring onions, carrot, and capsicum and cut them into juliennes. Mix the sauces into a bowl and then you are good to go.

Ingredients for Prawn Chow Mein Recipe

  • 300 grams noodles (preferably egg noodles)
  • 6 cloves garlic, finely chopped
  • 2 green chillies cut into julienne
  • Oil for frying veggies and noodles
  • Salt to taste

— Prawns/Shrimps —

  • 250 grams of prawns, cleaned and deveined
  • 1/2 tsp pepper crushed
  • 1/2 tsp chilli flakes
  • 1/2 tsp salt

—Eggs—

  • 3 whole eggs
  • salt and pepper to taste

—Vegetables—

  • 1/2 small cabbage
  • 5 green onions/spring onions with leeks
  • 8 to 10 french beans (cut into julienne)
  • 1 carrot (cut into julienne)
  • 2 capsicums (cut into julienne)

—Chow Mein Sauce—

  • 1 tbsp dark soy sauce
  • 2 tbsp oyster sauce (regular or vegetarian)
  • 2 tbsp red chillli sauce
  • 1/2 tsp black pepper, crushed
  • 1 tbsp vinegar
  • 1 tsp brown sugar
  • 1 tbsp sesame oil

Step-by-Step Instructions for Perfect Prawn Chow Mein

It’s important to prepare all our ingredients before preparing the chow mein. Let’s go through our step-by-step instructions for the perfect Pawn Chow Mein

1. Cut carrots, beans, and capsicum into juliennes. Thinly slice cabbage, carrots, and the white part of the green onions/spring onions. Slice the green part into 2-inch thick pieces

2. Mix ingredients of chow mein sauce in a bowl.

3. Beat the eggs with salt and pepper until fluffy and scramble.

4. Fry the marinated prawns in the same pan.

5. Boil water and cook noodles as per the package instructions.

6. Strain the noodles and run through cold water or rinse them until they are cold. Coat with oil to prevent them from sticking

7. Heat a wok/pan on high heat and add 1/2 cup of oil. Fry all the veggies for 1 min and remove.

8. Next fry the spring onions for a few seconds and remove.

9. Now reduce oil in the wok/pan and stir fry garlic, green chillies, and spring onion whites.

10. Add the noodles and the chow mein sauce and mix well, on high heat until the noodles are hot and sauces cooked.

11. Add all the fried veggies, prawns, and scrambled eggs. Combine well on high heat.

12. Check seasonings and adjust accordingly. Turn off the heat, and Enjoy!
