East Indian Pork Curry
The East Indian Pork Recipe (Pork Tamrial) has a fiery hot red colour that comes from the Kashmiri and Bedgi chillies. It also has a thick texture and a tangy taste from the vinegar and it’s almost like the Pork Vindaloo but with a thinner gravy.
Though very similar to the East Indian Pork Vindaloo, Pork Tamrial has a unique taste and texture altogether. We cook the meat with onions, green chillies, ginger, and garlic juliennes which gives texture and a slightly sweetish taste to the pork curry.
Traditionally, Palm/Toddy vinegar is used in East Indian Pork Recipes. This vinegar is mild and easily available locally. The quantity that you would like to use depends on the strength of the vinegar so adjust accordingly to suit your taste.
In this Pork Curry Recipe, the onions and garlic melt beautifully during cooking and thicken the curry. The end result is a red hot and tangy Pork Tamrial.
Ingredients for Pork Curry or East Indian Pork Recipe
PORK – 1 kg of lean pork meat without bones cut into medium bite-size curry pieces. Add turmeric and salt and allow the meat to rest for at least 10 to 15 minutes. We will later marinate it in a red masala paste for at least 30 minutes for the flavours to seep in.
ONIONS – 02 to 03 medium onions sliced. These onions melt in the gravy to give a beautiful texture to the pork curry.
GINGER & GARLIC – Ginger and garlic cut into juliennes. A few garlic flakes and a 2-inch piece of ginger for the red masala paste.
GREEN CHILLIES – Add a few green slit chillies to the gravy too, for that extra spice.
VINEGAR – Use good quality white vinegar or palm vinegar. Adjust vinegar in the pork curry recipe to suit your taste.
Tips for Perfect East Indian Pork Curry:
- Cut the pork meat into medium bite-size pieces for this pork curry recipe.
- Marinate the pork meat with the masala paste and let it rest for at least 30 minutes or overnight before cooking. This also helps in tenderizing the meat and allows the flavours of the spices to seep into the meat.
- The Vindaloo Masala Paste is versatile in that you can use it as a stuffing to fry fish like Mackerels, Pomfrets, or as a marinade for prawns or chicken.
- This vindaloo paste can be stored in the refrigerator for a couple of weeks without it losing its taste, flavour, or colour. No water, use only vinegar for grinding the paste.
- Cook the pork meat in a covered vessel on a low to medium flame for a pork curry with good texture and taste.
How to make Pork Curry Recipe (East Indian Pork Curry)
Now that we know what goes into making a perfect East Indian Pork Curry, let’s dive into the recipe. Gather the ingredients, don on your apron, and let’s get started. You will need –
- 1 kg Pork cut into medium pieces
- 3 medium onions sliced
- 2-inch piece of ginger julienne
- 7 to 8 flakes garlic julienne
- 1/2 tsp turmeric powder
- Salt to taste
Ingredients for the Masala Paste :
- 10 -12 Red Chillies (use a combination of Kashmiri and Bedgi chillies)
- 1 pod garlic peeled
- 1-inch piece ginger
- 1 tsp Cumin seeds
- 3-4 Cloves
- 1-inch Cinnamon stick
- 1/2 tsp Peppercorns
- 1/2 cup vinegar (check the strength of your vinegar and add accordingly)
Method:
- Cut the pork meat into medium curry pieces and then add salt to taste and a teaspoon of turmeric powder. Mix well and let the meat rest for at least 10 minutes, or until you get the masala ready.
- Grind all the ingredients for the masala paste with vinegar and water. Now transfer the pork into a pot and then add the ground masala paste. Mix well and marinate it for 2 to 3 hours or overnight. But if you are hard on time, give it a marination time of at least half an hour.
- Cut the onions into thin slices. Also, cut the ginger and garlic into juliennes and slit the green chillies.
- After the marination, transfer the pork into a cooking pot and add all the cuttings, onions, ginger, and garlic, and mix well.
- Then place the pot on medium flame. Cover the pot and allow the pork meat to cook on low to medium heat, stirring occasionally. Cooking time will depend on the heat as well as the pork meat.
- When the meat is halfway cooked, add a cup of warm water. Stir well and continue cooking on medium heat till done.
- East Indian Pork Curry Recipe is ready and you may garnish it with ginger juliennes and slit green chillies and serve.
