4. Herbs and Spices: We use a combination of herbs and spices, such as coriander, chilli powder, turmeric, black pepper, and Amchoor or mango powder and garam masala to season the filling.

5. Oil and Ghee: Use either oil or ghee to sauté the vegetables and add richness to the filling. You will also need oil to fry these puffs are we will not be baking them.

6. Salt: Season the filling with salt to enhance the flavors.

7. Corn flour Paste: We need to make a roux with corn flour and melted ghee (clarified butter) to bring out the layers in these puffs.

Step-by-Step Instructions For Preparing The Puff Pastry

1. Start by kneading the dough for the puff pastry. Knead a soft pliable dough with all-purpose flour, ghee, salt, and water. Set aside until we prepare the stuffing

2. To prepare the stuffing, saute 1 medium onion, green chillies, chopped ginger, and garlic until the onion turns translucent. Then add a cup of raw green peas and a boiled potato, coarsely ground, and saute for a minute. Add turmeric, black pepper powder, garam masala powder, amchur or dried mango powder, and salt to taste. Also, add a dash of black salt to enhance the flavour of the stuffing. Cook for 4 to 5 minutes and allow the stuffing to cool.

3. Now divide the puff pastry dough into 3 equal parts. Roll each part into an 11-inch disc. On each disc apply a paste of cornflour and melted ghee and roll into a log. This creates layers in the dough, which will result in a flaky texture.

4. Cut the dough into 1-inch pieces and set aside. Take a piece of the dough and roll it into a small disc with the cut side facing on the rolling board. This process helps to create even layers and enhances the flakiness of the pastry.

5. Now place a spoonful of the filling onto the puff pastry. Apply a little water to the inner edges. Fold into half and press the edges firmly to seal the puff pastry. Similarly, make all the puff pastries and keep them ready for frying.

6. Heat oil in a kadai and deep fry the pastries on low to medium heat. This ensures that the folds open up making the puff pastry crispy. Once they turn golden brown, remove the puff pastries and allow them to cool before serving.

Ingredients
  

For the Dough

  • 1 cup Maida/All Purpose Flour 110 grams
  • ½ Tsp Salt
  • 2 Tbsp Melted Ghee/Clarified Butter
  • ¾ Cup 150 ml water for kneading

For the Roux/Corn flour Paste:

  • 3 Tbsp Corn Flour
  • 4 to 5 Tbsp Ghee/Clarified Butter

For the Stuffing

  • 1 Cup green peas raw
  • 1 Medium Potato boiled
  • 1 Medium Size Onion chopped
  • 3 to 4 Green Chilies chopped
  • 2 inches Ginger chopped
  • 3 to 4 Cloves Garlic chopped
  • ½ Tsp Turmeric /Haldi Powder
  • ½ Tsp Black Pepper Powder
  • ½ Tsp Garam Masala Powder
  • ½ Tsp Amchoor Mango Powder
  • ½ Tsp Salt
  • ½ Tsp Black Salt
  • Oil for frying.

Instructions
 

Prepare the Puff Pastry Dough

  • Knead all-purpose flour, melted ghee, and salt with water, a little at a time until you get a soft pliable dough. Cover and set aside.

Preparing the vegetable filling for the puff pastry

  • Heat a tablespoon of oil or ghee in a skillet over medium heat. Add the chopped onion, green chillies, ginger and garlic, sautéing until they become translucent and fragrant.
  • Add coarsely ground green peas and potato to the skillet, along with your chosen herbs and spices. Stir-fry for a few minutes until they are slightly cooked but still retain some crunch.
  • Season the filling with salt, turmeric, amchur powder, black salt and garam masala powder and remove it from the heat. Allow the filling to cool completely before proceeding to the next step.

Assembling the puff pastry

  • Divide the puff pastry dough into 3 equal portions. Roll out each portion into an 11-inch disc.
  • Apply a paste made with cornflour and melted ghee over each disc and then roll into a log. Cut the log into 1-inch pieces.
  • Take one piece of the dough and roll it into a small disc of even thickness and place a spoonful of the filling on it.
  • Brush the edges with a little water, fold the disc and press it firmly to seal. Prepare all the puff pastries and keep them ready for frying.

Frying the Puff Pastry

    Notes

    1. Fry the puffs on low to medium heat to enable the folds to open.
