Chicken Roast with Potatoes. The recipe is very simple and makes an easy weeknight chicken dinner. We have been making this Chicken Roast along with some fried Potatoes at home for as long as I can remember.
This is basically an East Indian way to roast chicken at home without an oven. The chicken is cooked on low heat until it releases its juices first. These juices mix with the spices and coat the chicken pieces while evaporating thus making them extremely flavourful.

Actually, mum would make a big batch of this Chicken Roast and keep it handy in the refrigerator. When hunger strikes she would make lovely chicken roast sandwiches for us or pack some sandwiches for school.
You could also serve this Chicken Roast as a side dish with simple meals like dal and rice or vegetables. Fried Potatoes make a wonderful accompaniment to Roast Chicken so I suggest you include this too.
Chicken roast, when refrigerated has a shelf life of up to 8 to 10 days, the lemon juice in the marination helps it to stay fresh. I too like to make this in larger quantities and have it as a side dish with simple meals.
These also make lovely sandwiches for breakfast – just spread some mayo on your bread and layer it with shredded chicken roast along with some lettuce and you are good to go. A hearty breakfast of Chicken Roast Sandwiches is ready in minutes.

How to make Chicken Roast (with Potatoes)
This chicken roast is one of the most simple and easy recipes that I know and hence I make it way too often. It is such a straightforward recipe that you just can’t go wrong with it.
With minimum ingredients and time, you can make a very delicious Chicken Roast Recipe with Potatoes at home. The cooking time is also 15 to 20 minutes and you will end up with juicy chicken.
This roast also has a tangy lemony and peppery taste with a hint of spice. Besides this, the chicken literally is so juicy that it melts in your mouth if done well. Moreover, the chicken roast stays fresh for a couple of days and you can use it to make chicken salad or sandwiches when you crave it.
Ingredients for Chicken Roast
- Chicken – We like to use Chicken on the bone for this roast recipe because the juices from the bones keep the chicken juicy and flavourful. Boneless Chicken breasts or thighs also works wonderfully well.
- Potatoes – these make a perfect accompaniment to the Roast Chicken. Boil the potatoes, cut them into roundels, and then fry them separately and add to the Chicken Roast. The juices from the roast coat the potato slices making them so delicious.
- Red Chillies – Break a few red chillies and add them while marinating the chicken. These chillies render a little spice and a slight red hue to the chicken roast, so don’t skip them.
- Ginger – A big piece of ginger is mashed and added to the marination. The chicken juices from the ginger along with the red chillies and pepper make the roast aromatic and flavourful.
- Lemon – Use a generous amount of lemon juice in the marination for the much-needed tang in the roast. Preferably add the lemon peels too in the marinade and then discard them when you are ready to cook the chicken.
- Spices – Also add a few whole spices like cinnamon stick, cardamom, cloves, and a dash of pepper powder to the marination. Alternately, you could use some homemade Garam Masala Powder that will add to the aroma and flavour of the chicken roast.
Chicken Roast Preparation
- Marinate the chicken pieces with salt, spices, red chilles, ginger and lemon. Set the chicken aside overnight or for at least 30 minutes.
- Next, heat oil in a pan and then add the whole spices, if using. When the spices begin to splutter add this marinated chicken pieces and cook covered on low heat till done.
- Chicken Roast Cooking Time is approx. 25 to 30 minutes on low heat to get succulent chicken pieces.
- In the meantime boil, peel and cut 2 to 3 potatoes into roundels and shallow fry them in a pan. These potatoes will be added to the chicken roast recipe in the final step just before switching off the flame. Allow the potatoes to mix with the juices of the chicken roast, this will make them flavourful too.
- When the chicken is cooked just lower the flame and add in the potatoes. When the juices from the roast chicken coat the fried potatoes they get a wonderful flavour and aroma. I suggest you add extra potatoes to your chicken roast as kids love them.

Chicken Roast with Potatoes | How to make Roast Chicken
Ingredients
- 500 grams Chicken on the bone
- 2 medium Potatoes cut into slices and fried in a pan
- 4 Nos Dried red chillies
- 1-inch piece Ginger roughly mashed
- ½ tbsp Pepper powder for marination
- Juice of half a lemon
- salt to taste
- 2 – 3 tbsp Oil for cooking
- Whole spices, cinnamon, cloves, pepper, cardamom
Instructions
- Heat oil in a pan and add in the whole spices.
- When the spices begin to splutter add the marinated chicken and mix well.
- Cover and cook the chicken for approx. 20 minutes or till the chicken is tender.
- Open the cover and dry up the liquid.
- Add the fried potatoes and mix well.
- Serve as an appetizer or as a side dish.
Notes
- Adding potato is optional but is a perfect accompaniment to the Chicken roast recipe.
- Add more pepper powder if required.
- Using whole spices is optional you could add a dash of homemade Garam Masala Powder.
