Chicken Roast with Potatoes | How to make Roast Chicken

Ingredients
  

  • 500 grams Chicken on the bone
  • 2 medium Potatoes cut into slices and fried in a pan
  • 4 Nos Dried red chillies
  • 1-inch piece Ginger roughly mashed
  • ½ tbsp Pepper powder for marination
  • Juice of half a lemon
  • salt to taste
  • 2 - 3 tbsp Oil for cooking
  • Whole spices, cinnamon, cloves, pepper, cardamom

Instructions
 

  • Heat oil in a pan and add in the whole spices.
  • When the spices begin to splutter add the marinated chicken and mix well.
  • Cover and cook the chicken for approx. 20 minutes or till the chicken is tender.
  • Open the cover and dry up the liquid.
  • Add the fried potatoes and mix well.
  • Serve as an appetizer or as a side dish.

Notes

  1.  Adding potato is optional but is a perfect accompaniment to the Chicken roast recipe.
  2. Add more pepper powder if required.
  3. Using whole spices is optional you could add a dash of homemade Garam Masala Powder.
