Chicken Moilee East Indian Recipe

Chicken Moilee is an East Indian recipe. It is also one of the popular East Indian Chicken Curry Recipes. This delicious and simple recipe will diligently find its way to every East Indian dining table.

Traditionally, a Moilee is made with Duck meat but nowadays people prefer chicken over Duck. Moreover, duck meat is not easily available these days and is also tough to cook. Chicken on the other hand is easily available and cooks fast. Thus duck is substituted for chicken and this Chicken Moilee is generally made on festive occasions.

During weddings and ceremonies, Chicken Moilee is cooked in large quantities along with the other East Indian recipes such as the Mutton Stew.

To prepare the Chicken Moilee, first, the chicken and the potatoes are marinated and then shallow fried before they go into this amazing curry. Vinegar is added as a souring agent and also to preserve the dish.

East Indian Bottle masala is the only spice powder that we use for this Chicken Moilee recipe. My mum used to add a little garam masala powder towards the end of the cooking. This further enhances the flavour of the dish.

Chicken Moilee East Indian Recipe

Chicken Moilee is one of the easiest East Indian Chicken Curry Recipes that you can make in three simple steps.

STEP I – FRY THE CHICKEN PIECES AND THE POTATOES. Cut the chicken into medium pieces and the potatoes into roundels. Traditionally, Chicken on bone is used for this recipe and rightly it enhances the flavour of the curry.

Apply some salt, a little sugar (optional), and bottle masala or chilli powder. Allow the chicken and the potatoes to marinate and then shallow fry in a frying pan till they turn brown.

STEP-II – MASALA FOR THE CHICKEN MOILE. There is no grinding or pounding involved in making this chicken moilee. But we need about 4 to 5 onions to make the gravy. Cut the onions into thin roundels and also cut ginger and garlic into juliennes. Slit a few green chillies, length-wise.

STEP-III – MAKE THE GRAVY. Heat 3 – 4 tbsp oil or ghee in a deep vessel and saute the cut onions, ginger-garlic, and slit chillies. When the onions turn light brown in colour then add 2 – 3 tbsp of bottle masala and stir fry for 1 or 2 minutes. Add a splash of water if the onions are sticking to the pan and continue to saute.

Now add approx. 300 ml water to make the required gravy. When the gravy comes to a boil, add the fried/seared chicken pieces and vinegar to taste. Cook the curry for a further 5 – 10 minutes till the chicken is completely done. Finally, add the potatoes and garam masala powder. You can now switch off the flame.

Ingredients
  

  • 1 Kg Chicken washed and cut into medium pieces
  • 2 – 3 medium Potatoes cut into rounds
  • 6-8 medium Onions cut into thin slices
  • 1 pod Garlic cut into juliennes
  • 2 inch Ginger cut into juliennes
  • 2 – 3 Green chillies, slit
  • 2 – 3 tbsp Bottle Masala
  • ½ tsp Garam Masala powder
  • 1 tsp Sugar
  • 2 – 3 tbsp Vinegar
  • Oil for cooking and frying the chicken and potatoes
  • Salt to taste

Instructions
 

  • Apply salt, sugar and bottle masala to the chicken and potatoes. Fry the potatoes and chicken pieces in a shallow frying pan.
  • In a deep vessel, heat 2 – 3 tbsp oil and saute the onions, ginger, garlic and chillies till onions are light brown in colour.
  • Now add bottle masala and fry for a minute. Add a splash of water to avoid burning of masala. Make the required gravy by adding water.
  • Once the gravy starts boiling, add in the fried chicken pieces and vinegar. Cook for 5 – 10 minutes till chicken is tender. Add in the potatoes and the garam masala powder. Check for seasonings. Add in a little salt if required.
