Chicken Biryani in Pot | One Pot Chicken Biryani Recipe

Delicious and fragrant, this chicken biryani recipe can be prepared in one pot with minimal effort. Packed with authentic spices, this mouth-watering dish is sure to be a hit on busy weeknights.

Chicken Biryani in a Pot uses the same recipe as the regular Dum Biryani. The steps involved in this recipe is similar to any traditional Chicken Biryani Recipe but it is prepared like a pulao. Though a fewer steps are involved in this recipe, this Chicken Biryani does not lose the essence of a traditional Dum Biryani.

Ingredients for One Pot Chicken Biryani Recipe

  • CHICKEN For a flavourful Chicken Biryani, I like to use chicken on the bone. The juices from the bone adds flavours to the biryani. You will have to cut the chicken into the desired pieces and then allow it to marinate for at least an hour.
  • MARINADE FOR CHICKEN BIRYANI – A good marinade is the essence of a good biryani. Marination not only enhances the flavour of the chicken but also reduces its cooking time. Give the chicken a good marination time of at least 1 to 2 hours. Ingredients for Chicken Marinade – This is what I use to marinate 750 to 950 grams of chicken –
    • Curds – 1 cup
    • Ginger/garlic/chilli paste – (make a paste of 1-inch ginger, 1 pod garlic, and 5 to 6 big green chillies)
    • Red Chilli powder – 1 tbsp or as required
    • Turmeric powder – 1/2 tsp
    • Biryani masala powder – 1 tbsp of a homemade Biryani Masala powder
    • Brown caramelized onions – 1 cup (slice 3 to 4 onions and fry them till golden & then crush them with your finger when they turn crunchy)
    • Salt to taste
  • POTATOES – Most of us love potatoes in our Biryanis. You can marinate potatoes along with the chicken or fry them separately and then use. But for this recipe, I have skipped potatoes for a change.
  • RICE – A good quality of Basmati Rice is important for a perfect biryani. We generally like to soak the basmati rice for at least 15 to 20 minutes before cooking it for a regular biryani. But for making this biryani in a pot, just wash the rice 2 to 3 times and then cook it in the same pot.
  • WHOLE SPICES – A few whole spices adds a wonderful fragrance and aroma to the chicken biryani. Simmer the spices in hot oil to release its flavours before you could add the marinated chicken. If you don’t like to use whole spices then add some Garam Masala Powder while cooking. Whole spices to use –
    • Cinnamon – 1-inch stick
    • Cloves – 4 to 5
    • Cardamom 3 to 4
    • Pepper – 1/2 tsp
  • OIL/GHEE FOR COOKING – Use whatever suits you. We like to use ghee because of the rich flavour and texture it imparts to the biryani.

How to make Chicken Biryani in One Pot

First marinate the chicken with curds, ginger-garlic-chilli paste, red chilli powder, turmeric powder, biryani masala, crushed caramelized onions, and salt to taste.

After an hour or two, its time to prepare the Chicken Biryani. Start by heating a large thick bottom pot. Add ghee or oil and drop in the whole spices. Let the spices splutter for a few seconds so that it releases all it flavour in the oil or ghee.

Once the whole spices splutter and you begin to get a nice aroma, it’s time to add the marinated chicken. Give this a good mix and sear the chicken pieces all over on high heat. Cover and cook the chicken until 90% done.

Now reduce the heat and generously sprinkle coriander and mint leaves on the chicken. Also, add a few slit chillies if you like. Ensure that the heat is at the lowest.

Add in the washed basmati rice and spread evenly on the cooked chicken and then add hot water, in the ratio of 1: 1. Add about 1/2 a tsp of salt, ghee and lemon juice.

Increase the heat to high and cook the rice and chicken until the water reduces to the level of the rice. Turn down the heat to the lowest and then cover the pot with a tight-fitting lid. Cook the Chicken biryani in the pot on a low heat for 7 to 8 minutes. Once done turn off the heat and let it stand for 15 minutes before serving

To give your One Pot Chicken Biryani a unique flavour and taste, sprinkle some garam masala powder and add a 1/4 cup of saffron infused water on the rice. You can also garnish with some mint leaves.

Serving Suggestions

FRIED POTATOES – Serve One Pot Chicken Biryani with fried potatoes to enjoy it even more. To fry potatoes simply cut the potatoes into the desired pieces. Apply salt to taste and fry. You could either deep fry or shallow fry or even air fry the potatoes and serve with the biryani.

RAITA – Make raita of fresh yogurt and boondi or add some onions and tomatoes to make onion raita. To make a good boondi raita, first, soak the salted boondi in water for a few minutes. Squeeze the boondi well and then add it to fresh yogurt. Add salt to taste, chilli powder, or chopped green chillies, and serve this delicious raita with chicken biryani.

PICKLE & PAPAD – These also make a good accompaniment to the Chicken Biryani.

EGGS – Boil some eggs, cut them into two and serve with this Chicken Biryani.

Ingredients for Chicken Marinade

  • 1 cup Yogurt/Curds
  • 2 tbsp Ginger/garlic/chilli paste (1-inch ginger, 1 pod garlic, 5 to 6 green chillies)
  • 1 tbsp Red chilli powder
  • ½ tsp Turmeric powder
  • 1 tbsp Biryani Masala powder (homemade biryani masala or store bought)
  • 1 cup Brown caramelized onions (3 to 4 onions sliced and fried till golden)

Instructions
 

How to Make Chicken Biryani in One Pot

  • Heat oil/ghee in a thick bottom pot and drop in the whole spices. Let the spices splutter for a few seconds then add the marinated chicken and mix well.
  • Fry the chicken along with its marinade for 4 to 5 minutes and then cover the pot and allow the chicken to cook on a low to medium flame till done.
  • Garnish the chicken with coriander and mint leaves. Also, add a few slit chillies if you like. Ensure that the flame is at the lowest.
  • Spread the washed basmati rice evenly on the cooked chicken and then add 6 cups of hot water. Add a tsp of ghee, if required, and some lemon juice and let the water come to a boil.
  • Once the water has reduced, reduce the flame to the lowest, and cover the pot with a tight-fitting lid. Cook the biryani covered on a low flame for 7 to 8 minutes and then switch off the flame.
  • Open the pot after 15 minutes and delicious Chicken Biryani in Pot is ready to be served. You could add a few drops of saffron infused water on the biryani .

Notes

  1.  Add hot water to cook the rice in the ratio 1: 1.5 ie. For 3 cups rice add 4.5 cups or hot water.
  2. Add a little salt to the warm water before pouring it in to the rice.
  3. Use any Biryani Masala of your choice or simply blend a few whole spices to a fine powder and add it to the chicken.
  4. Cook the biryani in ghee or oil or a combination of ghee and oil.
