I got my Phillips Air Fryer years ago and have been making these potato wedges for a very long time. I never thought of publishing a recipe that is so simple to make. What I fail to realize is that there are people out there who also enjoy the simplest of recipes.
Potato Wedges have become a very popular snack among kids and elders as well. And if you cook this in a healthy way you need not worry about the extra calories.
Moreover, cooking these wedges in an air fryer not only saves time but also ensures crispy potato wedges with a soft interior. This is the way we all like our potato wedges to be, just like the ones you get at the restaurants.
I like to coat the Air Fryer Potato Wedges with melted butter and minced garlic. But you could skip this step if you want to keep them oil-free and healthy. Whatever way you decide to cook the wedges they will still amaze your family.
Tips to make Potato Wedges in Air Fryer
- Select good quality potatoes, any potatoes that are available locally in India will also work fine for this recipe.
- Wash the potatoes thoroughly, as we would be using them with the skin on. Lightly scrape off the top but do not peel them. Potatoes with their skin on make the best wedges.
- Slice the potatoes length-wise. Its important that the wedges are of equal thickness, this will ensure even cooking. Cut each potato into eight wedges depending on its size.
- For crispy potato wedges soak the cut wedges in cold water for some time. Then wash them a couple of times in cold water. This will wash away the starch and the result would be crispy wedges.
- Another way to get crispy wedges is to place the bowl of seasoned potatoes into the refrigerator or freezer for a few minutes. This would dry out the potatoes thus making them crispy while air frying.
- If you are in a hurry to make the wedges then pat them dry and season them with herbs of your choice. You could then air fry these potato wedges right away.
- Always pre-heat your air fryer for at least 5 to 10 minutes before you could fry the potato wedges. This will also ensure crispy wedges.
- When you fry the wedges ensure that you do not overcrowd the air fryer basket. Fry the wedges in batches for quick and even cooking.
How to make Potato Wedges in Air Fryer
Once you have selected the right potatoes wash them thoroughly under running water to get rid of all the dirt. Then cut the potatoes into wedges. Ensure that the wedges are of equal size for even cooking. You will get 8 wedges out of one medium potato.
As you cut the potatoes drop them into a bowl of ice-cold water to keep them from discolouring. Immersing the wedges in cold water will also ensure crispy wedges. Also, wash the wedges thereafter to get rid of the starch.
Pat the wedges dry and then marinate with herbs and spices of your choice. I prefer to keep it simple with only paprika, pepper, oregano, turmeric and salt to taste.
After you coat the wedges with the herbs then you may like to keep them in the refrigerator for a few hours before frying. You could skip this step and also drop the potato wedges directly into the air fryer basket.
Preheat your air fryer for 5 to 10 minutes at 200 deg C before you could add the wedges. It is always a good option to preheat your air fryer or oven before use.
Fry the wedges for 10 to 12 minutes and shuffle the wedges once in between to ensure even cooking. Air Fry the potato wedges in batches in case you are making them in larger quantities.
After the potato wedges are done you could sprinkle them with a dash of herbs and enjoy them right away. Potato wedges should be served immediately to enjoy their crispness and flavour.
You may also try out these wedges with some butter and garlic for extra flavour. For the butter garlic mix add a tablespoon each of minced garlic and butter to a bowl and microwave it for a minute. Then add some parsley, basil, or coriander leaves into the melted butter and pour this over the hot wedges to make them more flavourful.

How to make Potato Wedges in a Convection Oven
To make Potato Wedges in a convection oven, you must follow the same steps as you would for air fryer potato wedges.
After the wedges are ready for frying then preheat your convection oven to 200 deg C. Spread the potato wedges evenly on a baking tray and roast the wedges for 25 to 30 minutes. The cooking time here will depend on your oven and the number of potatoes. Baste the potatoes with oil or butter once while baking and at the same time turn them over for even baking.
Now sprinkle some more dry herbs and enjoy the potatoes right away. You could also coat them with some butter garlic for added flavour.

- 3 Potatoes, cut into wedges
- ½ tsp Red Chilli Powder or Paprika
- ½ tsp Pepper Powder
- ½ tsp Chilli Flakes
- ¼ tsp Turmeric powder
- Salt to taste
For Butter- Garlic Mix
- 1 tbsp Minced Garlic
- 1 tbsp Butter
- 1 tbsp Coriander leaves/Basil/Parsley

How to make Air Fryer Potato Wedges
- Marinate the potato wedges with all the spices. Keep this in the refrigerator for 30 minutes
- Preheat the air fryer for 5 to 10 min at 200 deg C.
- Add the wedges to the Air Fryer basket and set the timer to 10 minutes. Air Fry for 10 minutes or until the wedges are well cooked.
- Remove the potato wedges into a bowl and sprinkle with some dried herbs and enjoy them when still warm.
- Alternately, heat butter and garlic into a microwave for one minute. Add 1 tbsp coriander, basil or parsley to this mix and pour over the air fried potato wedges for added flavour.

- Immerse the potato wedges in cold water after you cut them for crispy wedges.
