About the Recipe
The Chicken Curry has spices that generally go into the making of an achar or pickle. It also has onion, tomato, and yogurt base that makes it tangy, spicy, and extremely flavourful.
This curry is best eaten in the winter months for its hot and spicy taste. It has a unique flavour and taste that basically comes from the 5 spice mix or Panch Phoron.
Panch Phoron is a mix of 4 spices – Kalonji (Nigella seeds), Fennel seeds (Saunf), Fenugreek seeds (Methi), Cumin seeds (Jeera), and Mustard Seeds (Rai). This spice mix is extensively used in the Northern and Eastern states of India. You can easily get this in all local grocery stores.
Achari Chicken Curry makes an excellent party dish. This chicken curry tastes best on the next date and hence you can conveniently make it in advance and serve.
How to Make Achari Chicken
Serves: 4 Persons
Prep. Time: 40 Mins + Marination
Cooking Time: 30 Mins
Ingredients:
- Chicken (with bones) – 600 grams
- Salt – 1tsp or to taste
- Juice of ½ lemon
- For the Achari Curry
- Bay Leaves – 02
- 5 Spice (Panch Phoron) – 1 tsp
- Red Chillies (broken) – 2
- Whole spices (Cinnamon 1″, Black cardamom – 1, Cloves – 4, Peppercorns 5 to 6)
- Garlic (roughly crushed) – 3 to 4
- Onion (sliced) – 2 medium
- Tomato – 1 medium
- Garam Masala Powder – ½ tsp
- Red Chilly Powder (Kashmiri) – 1 tbsp
- Coriander Powder – 1 tbsp
- Cumin Powder – 1 tsp
- Turmeric Powder – ½ tsp
- Yogurt (lightly beaten) – ½ cup
- Ginger (julinnes) – 1 inch
- Green Chillies – 3 to 4
- Oil (Preferably Mustard) – 3 tbsp.
Step 1: Marinate the chicken with salt and lemon juice. Set aside for at least half an hour.
Step 2: Later, heat the oil in Kadai or pan and add Bay leaves, Red chillies, Whole spices, and Crushed Garlic. Fry for a minute.
Step 3: Now add the powdered spices such as Red chilli powder, Coriander Powder, Cumin Powder, and Turmeric Powder. Fry for a minute.
Step 4: Now add the chicken with its marinade and also the yogurt and mix on medium heat till the spices and yogurt are well combined. Then cover the vessel and allow the chicken to cook for 15 to 20 minutes or until done.
Step 5: When the chicken is completely cooked then add Garam Masala Powder, Green Chillies, and Ginger juliennes. Cover and simmer for another 2 minutes only. Achari Chicken Curry is now ready to serve.

Notes
- 5 spice or Panch Phoron is easily available in all grocery stores. It is a combination of fennel seeds, mustard seeds, fenugreek seeds, cumin seeds, and onion seeds. You could also make your own by mixing all 5 spices in equal quantities.
