How to make Coconut Chutney for Idli or Dosa
Very few ingredients go into this Red Coconut Chutney. Since it is a coconut chutney the basic ingredient is fresh coconut and the red colour is from the use of red chillies.
- COCONUT – Use freshly grated coconut for this recipe of coconut chutney. Fresh coconut is the key to making a delicious chutney.
- RED CHILLIES – We use red chillies, like bedgi or guntur or any other variety will work just well for this chutney. Use chillies according to your spice level. If making this chutney for kids, use just 2 – 3 chillies.
- GINGER OR GARLIC – Then, it’s either ginger or garlic, never both. Use garlic if you like the taste like we do. Garlic gives a lovely flavour to this chutney, just 2 or 3 flakes are enough for 1 cup of freshly grated coconut.
- PEANUTS OR CHANA DAL – To give taste and volume to the chutney we add either peanuts or roasted chana dal, both are equally delicious. I generally use chana dal not because it’s more tastier but because it is always available in my pantry.
Ingredients
- 1 cup freshly grated coconut
- 5 – 6 Dried Red Chillies
- 3 – 4 Garlic flakes
- 1 – 2 tbsp Chana dal
- salt to taste
Method:
- Heat a small pan and add a tsp of oil and lightly roast the red chillies, while taking care not to burn them.
- Next, roast the chana dal till it emits a nice aroma or its lightly brown in colour.
- Combine all the ingredients into a blender and then blend it to a paste by adding a little water. Also add salt to taste.
