Mango in Curry?

The Mango season in India has almost come to an end. I had this recipe in mind for a very long time and I don’t know how I missed making it earlier. Better late than never, I decided to make this amazing recipe just before the season ends.

Many of us in India will be hesitant to add a Mango in Curry and prefer to enjoy ripe mango just as it is instead. In India, you can also make a variety of desserts with mango during the season.

Cooking raw mango in fish curries is very common during the season but it may sound insane to cook ripe Mango in Chicken Curry. But trust me, you must try out this recipe and you will surely love how amazing this recipe has turned out.

Cooking Ripe Mango with Chicken

Mango with Chicken is a very popular Asian recipe. This makes a wholesome recipe with all the goodness of Mango, yogurt, mint, and aromatic spices. The curry does not taste sweet, nor does it taste like mango but has a slightly tangy and sweet that comes from ripe mango.

If you are a Butter Chicken lover, then you will certainly love this Chicken Curry with Mango. The rich and creamy recipe with the goodness of fresh mango will definitely tantalize your taste buds. The curry has a creamy texture because of the fresh cream that we use during cooking.

Vegetarians in India love to have mango, in the form of pulp, with puris or Rotis. But non-vegetarians will never ever imagine eating mango with chicken, no doubt a rare combination but an utterly amazing recipe.

Ingredients for Chicken Curry with Mango

  • Chicken – You could use boneless chicken but I generally prefer chicken on the bone for this recipe. If using boneless chicken cut it into bite-sized pieces. You will then need to marinate the chicken for at least half an hour before you could cook it.
  • Yogurt – It is very important to use fresh yogurt in this recipe. Sour yogurt will intensify the sourness in the curry making it unappetizing. Homemade or also store-bought yogurt also works fine for this recipe.
  • Ginger-garlic paste – We will need only a tablespoon of ginger garlic paste for the marination. We do not want to overpower the flavour of the curry with ginger and garlic but keep the recipe mild.
  • Spice powders – This Mango Chicken recipe is mildly spiced with chilli powder, coriander, cumin powder, and a dash of Garam Masala Powder. Strong spices will overpower the flavor of fresh mango in this recipe.
  • Fresh Cream – Optional though, fresh cream will enhance the mango chicken by giving it a rich creamy texture. I personally like to use cream in this recipe and suggest that you do not skip it.
  • Mint Leaves – Mint leaves compliment the Mango Chicken curry. The fresh aroma wonderfully mingles with the flavour of mango, making the recipe appetizing. Do not skip mint leaves and use them in the final step for garnishing the curry.

Mango Chicken Curry Recipe

This Chicken Curry with Mango is so simple, quick, and delicious that you will find yourself making it more than once this season

Firstly, marinate the chicken and keep it aside for at least 30 minutes. The ingredients for the marination are as follows –

  • Chicken – 500 grams, on the bone
  • Yogurt – 1/2 cup
  • Ginger/garlic paste – 1 tsp
  • Red chilly powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Cumin powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Salt to taste, approx. 1 tsp.

Meanwhile, as your chicken is marinating, puree one whole fresh mango, preferably Alphonso.

To puree mango – First, peel and then cut the fresh mango into small pieces. Puree it into a blender and keep this aside for use in the recipe later.

Method:

  • In a pan, heat 3 tbsp oil or ghee, and then add a few whole spices like cardamom, cinnamon, and cloves. Let the spices splutter and then put in one finely chopped onion and fry till the onion turns translucent.
  • Once the onion is translucent, add in the marinated chicken and fry on a medium to low flame for about 3 to 5 minutes. This is to ensure that the spices release its aroma and the ginger-garlic paste loses its raw smell.
  • After 5 minutes add in half a cup of water and cover the vessel. Allow the chicken to cook until it is tender. This will take approx. 10 to 15 minutes, depending on the chicken, the marination time, and the flame.
  • After the chicken is cooked you can add in the pulp of the fresh mango. Also, add a tsp of garam masala powder and let the curry simmer for 2 to 3 minutes.
  • Now add 2 tbsp of fresh cream, this is optional but it gives a rich creamy texture to the Mango Chicken curry. Mix well and then simmer for one more minute. Later, add some mint leaves and then switch off the flame.

Nonetheless, this Mango with Chicken (Chicken curry with Mango) turns out to be amazingly delicious. Please don’t be skeptical about cooking Mango in a Curry, it’s awesomely tasty.

Ingredients
  

  • 500 grams Chicken, curry cut pieces
  • 1 Ripe Mango – pureed
  • 1 medium Onion, finely chopped
  • 1 tsp Garam masala powder Grind 1/2 tsp cinnamon, 1/4 tsp cloves, 1/4 tsp cardamom, 1/4 tsp pepper (use 1 tsp only)
  • 2 tbsp Fresh Cream optional
  • Mint Leaves for garnish¼

For the Marination

  • ½ cup Yoghurt
  • ½ tsp Ginger/garlic paste
  • 1 tbsp Red chilly powder
  • 1 tbsp Coriander powder
  • 1 tsp Cumin powder
  • ½ tsp Turmeric powder
  • ½ tsp Salt to taste

Instructions
 

Recipe for Mango Chicken

  • Marinate chicken with the ingredients, under marination, for at least 30 minutes
  • Heat a pan, add oil and a few whole spices like cinnamon, cloves and cardamom saute onion till translucent.
  • Then add the marinated Chicken and fry for 2 to 3 minutes.
  • Now add ½ cup water, cover the vessel and cook for 10 to 15 minutes or till the chicken is tender.
  • After 15 minutes add the mango puree and 1 tsp garam masala powder.
  • Mix well and simmer for 2 minutes. Now add fresh cream and simmer for one more minute.
  • Garnish with mint leaves.
  • Serve mango chicken with naan or puris.

Notes

  1.  To make garam masala, grind the following spices and use only 1 tsp.
  • 1/2 tsp Cinnamon sticks (break into small pcs)
  • 1/4 tsp Cardamom (whole)
  • 1/4 tsp Cloves
  • 1/4 tsp Peppercorns
     2.  Use one ripe mango puree, preferably Alphonso mango
