About Marzipan
Marzipan is traditionally made with almonds but subsequently, almonds got replaced with cashew nuts. Nevertheless, you could still use the same recipe and add almonds instead of cashew nuts.
The method of making marzipan that I am sharing in this post is so easy and a little different from the traditional method that my mum and grandmum used. I learned this unique method from Aunt Lila who is a fine lady with fabulous cooking skills. I am truly thankful to her, so now with this easy method, I look forward to making these every Christmas.
Be creative with this marzipan recipe and use it for making Easter Eggs. You could also use it for coving your Homemade Christmas Fruit Cake. Shape them into fruits or vegetables or simply press them into the silicone marzipan moulds.
You can make this marzipan in advance and store it in the refrigerator until you want to use it. Marzipan has a shelf life of at least 3 months when stored in a refrigerator.
What’s Marzipan made up of ? Marzipan Ingredients
Traditionally Marzipan is made up of almonds but in India, most of us like to substitute the almonds with cashew nuts.
This homemade Easy Marzipan Recipe uses only 3 ingredients and gets ready in minutes.
- CASHEW NUTS – Traditionally, we soak cashew nuts in water for a while and then blend them into a smooth paste. But for this recipe, we use powdered cashew nuts instead to simplify the process. But don’t forget to wash and pat dry the cashewnuts to remove any impurities.
- SUGAR – The traditional recipe call for double the quantity of sugar to the nuts. But we prefer to reduce the sugar for this recipe as we like this a little less sweeter. Use powdered sugar or just grind granulated sugar into a fine powder and use.
- EGG WHITE – The white of an egg in this mixture acts like a binder.
- ESSENCE – Though optional, I prefer to use Almond, Rose, or Vanilla essence to flavour up my marzipan.
Marzipan Recipe | How to make Marzipan in 3 simple steps
Step – I
- Soak the cashew nuts for 5 minutes and then drain them on to a kitchen napkin. Now, pat dry the cashew nuts and powder them finely in a food processor or mixie by pulsing them in bursts. Do not grind continuously as the cashew nuts will tend to release it’s oil, thus making it difficult to powder. Preferably, sieve the cashew nut powder to ensure that it is fine enough.
Step – II
- In the meanwhile, beat up an egg white in a thick bottom vessel. Add half a cup of plain water (approx 100 ml) and the powdered sugar and mix well.
Step – III
- Place this vessel on a high to medium heat and stir till the sugar melts completely. After the sugar melts keep stirring for 5 minutes only on a medium heat.
- Now that the sugar has melted, add the powdered cashew nuts and stir for another 5 to 6 minutes only on a medium to low heat. Add the essence at this stage, use vanilla or rose. Thereafter, put down the vessel from the heat and transfer the marzipan mixture onto a plate to cool. The mixture will gradually thicken.
- After the mixture has slightly cooled knead it gently and divide into 4 equal parts. Subsequently, add food colours of your choice and then mould the marzipan into silicone moulds.
- You can also be creative with this and shape them into fruits, vegetables, and flowers.
Marzipan – this traditional Christmas Recipe is easy to follow and a must-try recipe. Follow the exact instructions and nonetheless, you will end up with a fabulous recipe each time.
A word of caution though, the timings indicated here depend on the heat on which you are cooking. You will have to keep a check on this.
How to Store Homemade Marzipan ?
You could make this marzipan in advance and store it in the refrigerator or freezer for at least three to four months. Bring the mixture to room temperature before using it.
When you make this during Christmas, simply put them into an airtight container and store them. This Marzipan will stay fresh during the entire Christmas season.

Marzipan | Marzipan Recipe with Cashew Nut
Ingredients
- 250 grams Cashewnuts finely powdered in a mixie
- 450 grams Sugar Powdered
- 1 Egg white
- ½ tsp Rose or Almond essence
- ½ cup Water
- Food colours of your choice
- Marzipan moulds or stalks if making fruits
Instructions
How to make marzipan
- Grind the cashew nuts into a fine powder and keep aside.
- Beat up the egg white in a pan. Add ½ cup water and the powdered sugar to the pan and mix well.
- Now place this pan on medium flame and let the sugar dissolve. When sugar melts keep stirring for 5 minutes only and then add the grated cashew nuts. Mix well and cook on low flame for another 3 to 4 minutes only. Add the essence.
- Switch off the flame now and then spread the marzipan mixture on a flat dish.
- Knead the mixture lightly when still warm and divide it into 4-5 parts. Add food colours of your choice.
- Mould the marzipan using rubber mould or shape into fruits.
Notes
- Do not get tempted to overcook the marzipan. Follow the exact timing indicated in the recipe.
- Don’t let the mixie heat up while grinding the cashew nuts to avoid the release of oil.
- I have reduced the quantity of sugar in this recipe you may feel free to increase if required.
- Do not use icing sugar for this recipe. Grind granulated sugar in your mixie into a fine powder and use it.
