Marzipan | Marzipan Recipe with Cashew Nut

A Traditional Christmas recipe made with cashew nuts. You can mould them into fruits and vegetables or use it for your cake covering.

Ingredients
  

  • 250 grams Cashewnuts finely powdered in a mixie
  • 450 grams Sugar Powdered
  • 1 Egg white
  • ½ tsp Rose or Almond essence
  • ½ cup Water
  • Food colours of your choice
  • Marzipan moulds or stalks if making fruits

How to make marzipan

  • Grind the cashew nuts into a fine powder and keep aside.
  • Beat up the egg white in a pan. Add ½ cup water and the powdered sugar to the pan and mix well.
  • Now place this pan on medium flame and let the sugar dissolve. When sugar melts keep stirring for 5 minutes only and then add the grated cashew nuts. Mix well and cook on low flame for another 3 to 4 minutes only. Add the essence.
  • Switch off the flame now and then spread the marzipan mixture on a flat dish.
  • Knead the mixture lightly when still warm and divide it into 4-5 parts. Add food colours of your choice.
  • Mould the marzipan using rubber mould or shape into fruits.

Notes

  1.  Do not get tempted to overcook the marzipan. Follow the exact timing indicated in the recipe.
  2.  Don't let the mixie heat up while grinding the cashew nuts to avoid the release of oil.
  3.  I have reduced the quantity of sugar in this recipe you may feel free to increase if required.
  4. Do not use icing sugar for this recipe.  Grind granulated sugar in your mixie into a fine powder and use it.
