CHICKEN SHAHI KORMA, as the name implies, is a rich recipe for Chicken Korma. The kind that you would normally order at a restaurant but now you can try this recipe at home.
The Chicken Shahi Korma recipe is not only very delicious but also quick to make. The korma has a thick and rich gravy that is fit for the Royals, hence the name Chicken Shahi Korma.
Nonetheless, this easy Chicken korma is a curry with yogurt, fried onions and cashew nuts. The chicken is first marinated in yogurt, ginger-garlic, and chilli paste along with red chilli powder. Then we make a thick curry with roasted spices, cashew nuts, and fried onions.
We then add the marinated chicken into the curry along with tomato puree. Traditionally, tomatoes are not added to any korma recipes but it gives a nice tang and texture to the korma curry. You could omit tomatoes if you do not like using them.
This is a secret recipe for chicken korma that was given to me by a dear friend. Although I made this recipe many times earlier it was now lying in my diary, almost forgotten. Just as I was going through my recipe diary last week I stumbled upon this royal recipe.
Ingredients for Chicken Shahi Korma
CHICKEN – I have used 750 grams of chicken on the bone for this korma recipe, but boneless chicken also makes a good korma.
ONIONS – Fried or caramelized onions give the korma curry a rich texture. Fry the sliced onions and blend it with some roasted spices. We then add this to the korma curry.
YOGURT – Use fresh yogurt for this recipe of chicken korma. Yogurt is an important ingredient for a good chicken korma and we use it to marinate the chicken.
CASHEW NUTS OR ALMONDS – To get a rich Shahi korma curry we add cashew nuts or almond in the form of a paste.
WHOLE SPICES – Roasted whole spices give a wonderful aroma to the chicken korma, so please do not skip this. Roast the spices in a hot pan with a little oil to bring out its flavours and then blend them to a fine paste along with the cashew nuts, cumin seeds, and coriander seeds.
TOMATOES – We do not add tomatoes in a traditional korma recipe, you could omit if you wish. But tomatoes in this korma recipe enhance the texture of the korma curry and I prefer using them.
How to make Chicken Korma?
STEP I – MARINATE CHICKEN FOR KORMA CURRY
- Marinate 750 grams of Chicken with the following spices. Mix well with your hand and set it aside for at least 30 minutes. You can either keep it in your refrigerator or on your kitchen counter.
- Salt to taste
- Red Chilly powder – 1 tbsp
- Turmeric powder – 1/2 tsp
- Ginger/garlic/green chilly paste – 1 tbsp
- Yoghurt – 1 cup
STEP-II – ROAST THE SPICES, FRY THE ONIONS & PUREE THE TOMATOES
- In a frying pan, add 1 tsp oil and then roast the following spices and the cashew nuts
- Coriander seeds – 1 tbsp
- Cumin seeds – 1 tsp
- Peppercorns – 1/2 tsp
- Cinnamon stick 1-inch
- Cloves 3 to 4
- Mace 1 pc
- Cashew nuts – 8 to 10
- Next slice 02 medium onions and deep fry till they caramelize. Then grind these onions with the roasted spices and set aside. We will use this to make the korma curry.
- Also puree 02 medium tomatoes and set aside for use in the korma.
STEP III – HOW TO MAKE KORMA CURRY
- In the same vessel in which you fried the onions, remove the excess oil, and retain 3 to 4 tbsp. Add a few whole spices like bay leaf, cinnamon stick, and cloves.
- When the spices splutter, add in the paste of the fried onions and the roasted spices, that we made earlier. Fry this for a minute or two to blend well.
- Now, add the marinated chicken pieces along with the tomato puree. Mix well and cover and cook for 20 to 25 minutes or till the chicken is done.
- A delicious Chicken Shahi Korma recipe is done and ready to be served. Garnish this with fresh coriander or mint leaves.

Ingredients
- 750 grams Chicken on the bone
- Few whole spices 1 Bay leaf, 1cinnamon, 2 – 3 cloves & cardamom
- 2 medium Onions
- 2 medium Tomatoes, pureed
For the Marination
- 1 tbsp Red chilly powder
- 1 tbsp Ginger/garlic/green chilly paste (1-inch ginger, 8 -9 garlic flakes & 3 – 4 chillies)
- ½ tsp Turmeric powder
- 1 cup Yoghurt
- Salt to taste
Spices for Chicken Korma
- 1 tbsp Coriander seeds
- 1 tsp Cumin seeds
- ½ tsp Peppercorns
- 1 inch Cinnamon Stick
- 4 Cloves
- 1 piece Mace/javitri
- 8 – 10 Cashew nuts
- 1 tsp Oil for roasting the spices
Instructions
- In a pan heat 1 tbsp oil and roast the spices one by one. Also, lightly roast the cashew nuts.
- Heat a generous amount of oil in a vessel, in which you will make the Chicken Korma. Fry the sliced onions till they caramelise. Remove the onions and then grind with the roasted spices.
How to make Chicken Korma
- Use the same vessel in which you fried the onions. Remove the excess oil and retain 3 to 4 tbsp oil.
- Add whole spices (Bay leaf, cinnamon stick, cloves, cardamom) and let it splutter. Now add the fried onions and roasted spices paste and fry for a minute or two.
- Add the marinated chicken pieces and the tomato puree. Mix well ,cover and cook for 20 to 25 minutes or till the chicken is done. Stir once or twice.
- Garnish with coriander leaves and serve with Naan or Roti.
Notes
- Add 1/2 cup water to make the korma if you need more gravy.
- Adjust spices to suit your taste.
- Stir the korma, occasionally while it is cooking, at least once or twice.
- You could skip tomatoes if you wish but adjust the quantity of yogurt.
