Moist Banana Bread Recipe with Oil

- 3 Banana, over ripe
- ¾ cup Brown Sugar - 150 grams 3/4 cup
- ⅓ cup Oil - 80 ml
- 1½ cup All-purpose flour - 180 grams 1.5 cups
- 3 whole Eggs
- 1 tsp Vanilla Essence
- 1 tsp Cinnamon powder
- 1 tsp Baking powder
- ½ tsp Salt
Sift all-purpose flour, baking powder, cinnamon powder & salt and set aside.
Mash bananas with a masher and add sugar, and oil and combine well. Beat with a whisk or an electric beater.
Add eggs one at a time and continue mixing the batter. Add vanilla essence.
Now add the dry ingredients and mix well with a spatula. You could also use an electric beater on a low speed.
Transfer the batter into a greased on lined 7 x 7 inch baking pan and bake at 170° C for 35 to 40 minutes or until a skewer inserted comes out clean.
Allow the cake to cool and then slice and enjoy!
- Baking time depends on your oven. Check the cake after 30 minutes and increase the baking time accordingly.
- Sift the dry ingredients 2 to 3 times to incorporate air and get a fluffy cake.
- Do not over bake or over mix.
- Use 3 to 4 bananas, depending on its size.
- Allow the cake to cool completely before slicing to avoid it from crumbling.
