Lentils and Eggs Recipe

Delicious recipe with Eggs on bed of Lentils. Amazingly simple and tasty.

- 1 cup Red Masoor dal, washed and soaked soak for 10 - 15 minutes
- 1 medium Onion sliced
- 3 - 4 Green Chillies, slit
- 4 - 5 Eggs
- Oil for cooking
- Salt to taste
- ½ tsp pepper powder
How to cook Lentils
Heat oil in a pan and saute one onion and slit green chillies till onions are translucent
Then add the soaked dal, salt and sufficient water and cook till dal is 80 - 90% done.
Now break in the eggs one by one over the lentils/dal. Sprinkle a little salt over the eggs
Cover and simmer for 4 - 5 minutes till the eggs are cooked.
Sprinkle pepper powder and serve with rotis or rice.
- Use masoor dal and do not overcook the lentils.
- Break the eggs in a small bowl and then put it over the lentils. This is just in case the eggs are bad.
- Adjust chillies to suit your taste.
