Lentils and Eggs Recipe

Ingredients
  

  • 1 cup Red Masoor dal, washed and soaked soak for 10 - 15 minutes
  • 1 medium Onion sliced
  • 3 - 4 Green Chillies, slit
  • 4 - 5 Eggs
  • Oil for cooking
  • Salt to taste
  • ½ tsp pepper powder

Instructions
 

How to cook Lentils

  • Heat oil in a pan and saute one onion and slit green chillies till onions are translucent
  • Then add the soaked dal, salt and sufficient water and cook till dal is 80 - 90% done.
  • Now break in the eggs one by one over the lentils/dal. Sprinkle a little salt over the eggs
  • Cover and simmer for 4 - 5 minutes till the eggs are cooked.
  • Sprinkle pepper powder and serve with rotis or rice.

Notes

  1.  Use masoor dal and do not overcook the lentils.
  2.  Break the eggs in a small bowl and then put it over the lentils.  This is just in case the eggs are bad.
  3. Adjust chillies to suit your taste.
