- 1.5 kgs Mutton bone-in
- 5 medium Onions sliced
- 2 medium Tomatoes sliced
- 12 - 15 flakes Garlic
- 2 inch Ginger
- 5 to 6 Green chillies or as per taste
- Juice of half a sourlime
- Coriander leaves for garnish
- 3 to 4 tbsp Oil for Cooking
- Salt to taste

- 2 Bay leaves
- 2 inch Cinnamon stick
- 4 Green Cardamom
- 1 Black Cardamom
- 4 Cloves
Dry Spices
- 3 tbsp East Indian Bottle Masala
- 1 tbsp Kashmiri Red Chilli Powder
- ½ tsp East Indian Garam Masala
- ½ tsp Turmeric Powder
To make this mutton curry, just heat a pressure cooker and add some oil. When the oil is hot enough, add a few whole spices and let them sizzle.
Once the spices begin to sizzle, add in the chopped onions along with the chopped or coarsely ground ginger, garlic, and green chillies.
When the onions turn translucent, add the bottle masala powder, chilli powder and the mutton. Also, add the chopped tomatoes and combine well.
Add 200 ml of warm water, cover the pressure cooker, and cook until the mutton is tender. This can take you about 2 whistles or 10 to 15 minutes of cooking on medium heat.
When you know that the mutton is cooked, switch off the flame and let the pressure release on its own.
After you unlock the pressure cooker, add a dash of garam masala and a squeeze of lemon juice or vinegar. Simmer the mutton curry once again for a couple of minutes and then garnish with coriander leaves.
