Deliciously Spiced: Prawn and Cauliflower Curry Recipe

A delicious curry with Prawns and Cauliflower from the East Indian Cuisine.

Ingredients
  

  • 350 grams Prawns cleaned and deveined (approx 12 to 15)
  • 1 medium Cauliflower cut into florets
  • 2 to 3 tbsp Vegetable oil
  • 1 medium onion finely sliced
  • 8 to 10 cloves Garlic mashed
  • ½ cup Grated coconut extract 1 cup milk or grind into a smooth paste
  • 1 tsp Raw rice
  • 1 small ball of tamarind soaked in 1/2 cup hot water
  • 3 tsp Bottle Masala /red chili powder/curry masala adjust according to your spice preference
  • Salt to taste
  • Fresh coriander leaves chopped for garnish

Instructions
 

  • Heat vegetable oil in a large pan over medium heat. Add the crushed garlic cloves and fry for a minute.
  • Then add the sliced onion and fry until golden brown, stirring occasionally.
  • Add the cauliflower florets and salt to the pan and mix well. Add a cup of water.
  • Cover the pan and cook for about 10 minutes or until the cauliflower is slightly tender.
  • Add the prawns and bottle masala to the pan and mix well to combine the spices. Cook for an additional 5-7 minutes, until the prawns are cooked through and the cauliflower is tender.
  • Adjust the water to make the needed gravy and add tamarind extract. Also, add the coconut milk. Simmer for 2 minutes to let the flavours meld.
  • Garnish with freshly chopped coriander leaves and serve hot.

Notes

  1.  If you don't have bottle masala, add red chilli powder with garam masala powder.  Or use any red curry powder that you have.
  2. Adjust red masala to suit your taste.
  3. Do not over cook the prawns.
  4. Add coconut milk or blend coconut into a fine paste and add.
