- 500 grams Country Chicken (marinate with salt and turmeric) with bones
- 1 medium Onion, sliced
- Whole spices - 1-inch Cinnamon stick, 1 bay leaf add other spices of your choice
- 4 tbsp Cooking oil
- Juice of 1/2 a sour lime
Masala Paste
- 2 tsp Coriander seeds
- 1 tsp Cumin seeds
- 1 tsp Sesame seeds
- 1 tsp Poppy seeds/Khuskhus
- Whole spices (2 black cardamom, 3 green cardamom, 1 star anise, 1-inch cinnamon stick, 4 cloves, 1/2 a mace, and 8 to 10 peppercorns)
- 8 Dried Kashmiri chillies
- 8 Garlic cloves
- 1- inch ginger
- ΒΌ of a whole dried coconut
- 1 tsp oil for roasting the spices
Start by marinating the country chicken with salt and turmeric and set it aside for at least 30 minutes.
Next heat a pan with 1 teaspoon of oil and roast all the spices under 'Masala Paste' until aromatic. Then grind them into a smooth paste with ginger and garlic.
Now heat a pressure cooker and add 4 tablespoons of cooking oil. Add in the whole spices and one sliced onion. Fry the onion, until it turns translucent.
Add the marinate chicken and fry 2 to 3 minutes on high heat. Then add the ground masala paste and continue frying for atleast 5 minutes.
Add a cup of water and put on the pressure cooker lid. Cook for 2 to 3 whistles on medium heat. Open the cooker only after the pressure is released and add juice of half a lime.
Serve with steamed rice or rotis.
