Make a pilable dough with flour, ghee, salt & water. Rest it for a few minutes before you start.

Roll the dough into 3 equal discs of 12 inches diameter. Roll as thin as you can for crispy layers.

Place each disc one over the other layering it with roux. Now fold these into a strip of about 1.5 inches.

Now once again cut the strip into 1 inch pieces. You will get 12 pieces to roll into nevries.

Roll each piece into a square. Keep the edges slightly thick for the folds to form while frying.

Apply little water or milk at the edges of the Karanji and fold. Press the edges well to avoid the filling to seep out while frying.

Deep fry the Karanjis in oil or ghee on a medium heat. Fry until golden brown all over, turning once or twice.
