How to make a bakery-style cake at home that is quick and easy with just a few tablespoons of fruits and a dash of vanilla.
This is basically a Cake for Tea Time, and one of the best cake recipes that you can bake at home quickly The cake turns out like the ones you get in local bakeries with a few fruits that are generally tutti frutti.
In this recipe, I have also used red cherries and cranberries along with the tutti frutti. The taste of dried cranberries in any cake is just awesome. You can use any fruits that you have or simply use tutti frutti alone.
The cake is delicious and also pleasing to the eye with dots of red, green, and yellow coloured fruits and a favorite among kids. This bakery-style cake is a perfect tea time cake that you can enjoy with your afternoon tea or coffee.

Ingredients & Substitues
Butter – 150 grams (1/2 cup + 1 heaped tbsp) Using butter gives any cake a rich taste and texture. In case you wish to use unsalted butter then add a pinch of salt to your cake batter. You could also substitute butter with unflavoured cooking oil.
Caster Sugar –115 grams (1/2 cup). I love using caster sugar because it dissolves easily in the batter. Caster sugar also keeps my cakes light and fluffy. You can also substitute with 1/2 cup granulated sugar which you can then powder in your blender.
Eggs – 03 Nos. Use whole eggs for this cake and make sure to add them one by one to the cake mixture after you cream the butter and sugar. Adding all the eggs together sometimes curdles the cake batter. To make eggless cake use 1/2 cup yogurt with a pinch of baking soda. Rest this mixture for 5 minutes and use it instead of the eggs to make an eggless cake.
Flour – 200 grams (1.5 cups). Use All purpose flour/maida or self-raising flour. To get a light and fluffy cake, always sift your flour at least three times, along with the baking powder.
Baking powder – 5 grams (1 tsp). Always test your baking powder before use, unless you are sure of its freshness. To check the freshness of your baking powder, drop in 1/2 tsp of baking powder in 1/2 cup of warm water. When you see tiny bubbles in the water, you know that your baking powder is fresh, go ahead and start baking.
Fruits – 4 to 5 tablespoons. Add 4 to 5 tbsp or more of any fruits that are readily available to you. I used 2 tbsp of tutti frutti, 1 tbsp each of cranberry and red cherries in this cake. You could also use only tutti frutti in this recipe.
Vanilla – 1/2 teaspoon. Use vanilla or any other essence to flavour the cake.
How to make Bakery Style Cake
Prep Time: 10 minutes
Baking Time: 35 to 40 minutes at 180° C in a pre-heated oven
Net Wt: Approx. 650 grams
Step 1. Line a 7 or 8-inch baking tin with parchment paper and set it aside.
Step 2. Add 1 tsp baking powder to the all-purpose flour or maida and sift it 3 times. Then add the fruits into this flour and mix well. Keep aside for use later.
Step 3. Into a mixing bowl, add butter and caster sugar. Cream well with an electric beater or a hand whisk until the mixture turns light and creamy. At this stage, add 1/4 teaspoon salt if you are using unsalted butter.
Step 4. Next, add the 3 eggs one at a time and beat well after each egg. Also, add in the vanilla essence.
Step 5. Next, add in the flour along with the fruits, little by little, and mix gently with a spatula until all the flour has been incorporated. You can add 2 tbsp of milk to the batter at this stage if you feel that your batter is too thick.
Step 6. Now, pour the batter into the lined baking tin and spread it evenly with the help of a spatula. Tap the baking tin a couple of times to remove air bubbles, if any.
Step 7. Place the baking tin in a pre-heated oven, and bake the cake for 35 to 40 minutes at 180° C.
Step 8: You know that your cake is done, when a skewer inserted comes out clean. Allow the cake to slightly cool and then de-mould it. Cut the cake into slices and serve with a cup of tea or coffee.

Notes
- To make eggless cake substitute 3 eggs with ½ cup yogurt and 1/4 tsp baking soda.
- Adjust dried fruits as desired – I used cranberry, tutti frutti, and red cherries
- Bake the cake as per your oven settings. 180 deg C is generally the standard setting for baking.
