Ingredients of Besan Ladoo
Let’s go through the ingredients of Besan Ladoo before we make proceed to make them at home.
Besan – Besan is also known as chickpea or gram flour. Using the right gram flour is the key to making perfect Besan Ladoos. Use gram flour that you get especially for making ladoos. This gram flour is slightly coarse and perfect for making besan ladoos.
The best is to make your own gram flour at home. To do this roast chana dal or split gram for a few minutes and then grind it into your mixer. You will get a slightly coarse gram flour that is perfect for the ladoos. If making large quantities, you can give this to your grinding mill and ask them to coarsely grind it, but not too thick.
Ghee – Pure ghee in Besan ladoo is just wonderful and also the right proportion is very important for melt in the mouth ladoos. If you use less ghee then your ladoos will turn out hard. And if you use more ghee the Besan ladoos will not hold shape.
Sugar – The best option is to use bura sugar. Though white sugar and bura sugar have the same calories bura sugar is considered to be the least refined form of sugar. Bura sugar is slightly coarse and perfect for making Indian sweets and desserts, especially ladoos. This sugar is easily available in any of the grocery stores.
But if you cannot lay your hands on bura sugar then you can grind granulated sugar in your mixer grinder. Using granulated sugar may not give you the best results.
Nuts – A few roasted nuts like cashew nuts, almonds, and pistachios will give a wonderful crunch to the ladoos. Use them as per your taste or simply give them a skip, your ladoos will still taste fabulous.
How to make Besan Ladoo at home
With just a few ingredients you can roll out the most delicious besan ladoo at home. Let’s know how to make besan ladoo step-by-step.
Besan flour – You will be very satisfied with the end results when you make the besan flour at home. For this, lightly roast 2 cups of chana dal for 5 to 6 minutes on a medium flame. Once cool grind it into a powder in your mixer. It’s alright if the powder is not too fine, but a slightly coarse powder is what we need for perfect besan ladoos.
Step I – Roast the besan flour – Once you have your besan flour ready, heat about 1cup (200 gms) of ghee in the same vessel in which you roasted the chana dal. Then add all the besan flour little by little, stirring continuously on a medium to low flame.
Ps: Add a pinch of salt whenever you are working with flour and unsalted butter/ghee.
Roast the besan flour well to make good ladoos. After stirring for about 10 minutes you will then start getting a lovely aroma from the roasted besan.
Continue to roast for another 20 to 25 minutes only on a low flame. At times depending on the besan, you may find that the consistency of the ladoo mixture is getting softer. It will gradually harden when cooled.
You will also find that the colour of the flour has changed. Now add 2 tbsp of milk and continue to stir till the milk has completely evaporated. Now it’s time to switch off the flame.
Transfer the roasted gram flour into another vessel and allow it to cool. Add powdered cardamom and also the roasted dry nuts at this stage.
Step II – Add powdered sugar. Once the ladoo mixture has slightly cooled add about 250 to 300 grams of powdered sugar. Mix well till the sugar is fully incorporated into the ladoo mixture.
Don’t worry if the mixture looks dry at this stage, continue to knead well till the ghee and the sugar begin to melt with the warmth of your hands.
Step III – Form the Ladoos. Take small portions of the ladoo mixture and then form them into small balls and top it with a bit of pistachio or any nut.
When thoroughly cooled store the ladoos in an airtight container and enjoy besan ladoos during Diwali.
