What is Mangalorean Chicken Curry?

Mangalorean Chicken Curry is a traditional dish from the coastal city of Mangalore in Karnataka, India. The cuisine of this region is influenced by fresh spices, coconut, and bold flavors.

This curry is known for its rich masala base, vibrant color, and also a balanced spice level. Many households have their own variations of the recipe, thus making it a treasured part of home cooking in coastal India. The recipe here is also a family recipe shared by my Mangalorean friend Ms Hitha Shetty.

The dish is often served with rice or traditional breads, making it a comforting and wholesome meal.

Ingredients for Mangalorean Chicken Curry

To prepare this flavorful curry, you will need the following ingredients:

Main Ingredients

• Chicken – 1 kg (curry cut pieces)
• Onion, 1 medium, finely chopped
• Turmeric powder – 1/2 tsp
• Salt to taste

For the Masala Paste

• Tamarind – 1 big marble-size ball
• 2 medium or 1 big onion sliced
• 7 to 8 cloves of garlic
• 1 tsp cumin seeds
• 2 tbsp coriander seeds
• 7 to 8 peppercorns
• 4 cloves
• 1/2 tsp fenugreek seeds/methi
• 10 to 12 dried red chillies (a mix of bedki and madras chillies)
• 1 cup grated coconut
• Oil/ghee for frying spices – 2 tsp

For the temper
• 2 tbsp ghee/oil
• 1 medium onion, chopped

How to Make Authentic Mangalorean Chicken Curry

Follow these simple steps to make this Authentic Chicken Curry.

1: Roast Onions and Spices
Heat oil in a pan or a wok and sauté the sliced onions and garlic until they turn translucent.

2: Aromatics & Spices
Once onions are translucent, add coriander seeds, cumin seeds, fenugreek seeds, cloves, peppercorns, and roast for about a minute or two until fragrant. Remove onto a plate and allow to cool. Then add red chillies and roast for a few seconds. Transfer to the plate and let cool.

3: Roast Coconut
Now add the grated coconut and roast until they turn light brown.

4: Blend the Ingredients
Once all the ingredients are cooled, transfer them into a mixer jar and then grind them into a smooth paste

5: Prep the Chicken Curry
Into a cooking vessel, add the chicken pieces, chopped onions, salt, turmeric, and the curry paste. Mix well to coat them with the masala.

6: Cook the Curry
Add water as needed and cook until the chicken becomes tender and the curry thickens.

7: Temper the Dish
Fry one medium chopped onion in ghee until brown and pour over the chicken curry for additional flavour.

Main Ingredients for Chicken Curry

  • 1 kg Chicken curry cut pieces
  • 1 medium Onion finely chopped
  • ½ tsp Turmeric powder
  • Salt to taste

For the Masala Paste

  • 1 marble size Tamarind
  • 2 medium Onion sliced or 1 big onion
  • 7 to 8 cloves Garlic
  • 1 tsp cumin seeds
  • 2 tbsp coriander seeds
  • 7 to 8 peppercorns

For the Temper

  • 2 tbsp ghee/oil
  • 1 medium onion chopped

Instructions
 

  • Take a wok (kadai) or pan and fry the onion slices, and garlic in either ghee or oil.
  • Once onions are slightly translucent, add cumin seeds, coriander seed, fenugreek seeds, peppercorns, and cloves, and fry till the raw smell goes off. Once fried, transfer them to a plate to cool.
  • In the same pan, roast a mix of bedki and madras chillies for a few seconds and then remove to the same plate.
  • Now, roast the grated coconut till light brown.
  • Once all the ingredients have cooled, grind them to a fine paste.
  • Transfer the ground masala to a cooking vessel, add finely chopped onion, salt, turmeric, and the chicken pieces. Mix well and add water to cook the chicken.
  • Once the chicken is cooked, temper the curry with finely chopped onions fried in ghee.
  • Serve chicken curry with steamed rice, sannas, mangalorean rotti, or neer dosa.

• Use fresh spices for the best flavor.
• Cooking the onions well helps build a rich base for the curry.
• Adjust the spice level according to your preference.
• Allow the curry to simmer so the flavors develop fully.
