Ingredients
  

For the Puran (Sweet Chana Dal and Jaggery Filling)

  • ½ kg Chana Dal
  • 400 grams Jaggery
  • 2 tbsp Sugar
  • 1 tsp Cardamom Powder
  • ½ tsp Turmeric Powder
  • ½ tsp Salt

For the Dough

  • ½ kg Whole Wheat Flour
  • 2 tbsp Oil
  • Salt to taste

How to make Puran (Lentil with Jaggery)

  • Wash and soak the chana dal for at least 30 minutes and then boil it with salt and turmeric till soft.
  • Separate the Chana Dal from the Stock and transfer it into a pan. Add Jaggery and cardamom and keep stirring till the mixture dries up.
  • Allow the Puran to cool and then blend it into a thick paste.

How to make the Dough

  • Knead the wheat flour, oil and salt with water to make a soft pliable dough.
  • Cover the dough and allow it to rest for 30 minutes.

How to prepare Puran Poli

  • Take a small ball of the dough and shape it into a small cup with your fingers. Take a big ball of the Puran or filling and stuff it into the dough.
  • Roll this dough with the stuffing into a flat chapatti with a rolling pin.
  • Roast this Puran Poli on a hot Tawa till done on both sides and smear it with pure ghee.

Notes

  1.  You could make the dough with whole wheat flour or maida or a combination of Wheat flour and maida.
  2. Knead the flour into a soft dough for soft Puran polis
  3. Do not overcook the chana dal.
  4. Feel free to skip the sugar in the Puran.
  5. Serve Puran Polis hot with Pure Ghee
