Instructions

How to make South Indian Chicken Curry

  • Marinate chicken with salt and turmeric for at least 10 to 15 minutes
  • Heat oil in a pan and saute the onions till translucent.
  • Now add the marinated chicken, chopped tomato and fry for 2 to 3 minutes and then cover and cook for at least 8 to 10 minutes.
  • After 10 minutes add the masala paste and mix well. Also add the curry leaves at this stage. Cover once again and cook till the chicken is tender.
  • Open the lid and add lemon juice (juice of half a lemon)
  • Finally, garnish with coriander leaves.

Notes

  1.  You could use tamarind instead of lemon juice.  Blend a small ball of tamarind along with the masala paste.
  2. Add curry leaves after you add the masala paste or while frying the onions.
  3. Use chicken stock or water if you need to make a thin gravy.  I did not use any water or stock to make the gravy but let the chicken cook in its own juices.
  4. You could temper the chicken after it is cooked.  For this heat a pan with oil and add a few curry leaves and garlic flakes.  Pour this over the cooked chicken.
