Madeleines are small french tea cakes baked in a shell-shaped mould with a slight bump on one side.

These madeleines are soft and buttery inside with a golden crust. You could also just bake them and sprinkle them with some powdered sugar.

Prepare the batter for the madeleines.

Bake them at 170 deg C in a pre-heated oven for 20 minutes.

Dip the madeleines in Raspberry syrup and coat with coconut.

Steps to make Raspberry Madeleines

Beat butter, sugar, eggs and add flour, baking powder, milk and vanilla essence.

Step I

Pre-heat the oven at 170 deg C   Line a muffin mould and fill them 3/4 with the batter. Bake the madeleines  for 20 minutes. Allow to cool on a cooling rack.

Step II

Prepare Raspberry syrup by melting 1 cup sugar with 1/2 cup water on medium heat. Add Raspberry colour and essence.

Step III

Dip each madeleine into the Raspberry Syrup and then coat with desiccated coconut.

Step IV

Raspberry Madeleines are simple to make at home with basic sponge cake ingredients. The Raspberry syrup and desiccated coconut add to the overall flavour     of the madeleines.
