Rice Pudding with rice from the new harvest. This is the tradition followed by the East Indian Community as a gratitude to our ancestors on All Souls Day (02 Nov)

As we progress from generation to generation we must remember the sacrifices and devotion of our ancestors. So as a gratitude  we offer them the first harvest of the season in the form of this rice pudding.

Soak rice & black-eyed peas (chowli)

Boil rice and chowli with thin extract of coconut milk and salt.

Add jaggery, cardamom powder & finally the thick coconut milk.

Steps to Make Atola

Wash new rice and chawli beans and soak them in water for a few hours. This will ensure faster cooking.

Step I

Add thin coconut extract, salt and 2 cups water.  Bring this to a boil.  Cover & cook till done

Step II

When cooked, add grated jaggery & cardamom powder.  Mix well and cook for a few more minutes until jaggery completely melts.

Step III

Finally add the thick coconut milk extract.  Simmer the pudding for 2 minutes & then turn off the heat.
